A new dual-concept restaurant is set to open in Sasazuka, Shibuya on Thursday, April 9, 2026. The venue operates as chicken paitan ramen restaurant Hakkeisha during the day, and transforms into grilled chicken wing specialty restaurant Torinoiro in the evening — a "two-crop" (二毛作) style that uses the same kitchen and seating for two distinct dining concepts.

The restaurant is operated by EASTONE, a Sapporo-based restaurant company that runs a portfolio of dining brands including Mia Bocca, Itadaki Kokko-chan, and Cucina across Hokkaido, Tohoku, and the Kanto region.

Ramen at Lunch, Grilled Wings at Night — A New Dining Style for Sasazuka

The Sasazuka location sits in a neighborhood where residential and office use coexist, and the dual format is designed to match that variety. Lunch offers a bowl of creamy chicken paitan ramen, while the evening shifts to grilled chicken wings to share over drinks. The format is intended to serve weekday lunch crowds, after-work diners, and weekend family visits alike.

Hakkeisha operates under the concept of "a rewarding bowl that's beautiful to look at and delicious to eat." The broth is made by slow-simmering domestic chicken carcasses to concentrate umami, then blending in a small amount of pork bone stock for depth and a natural sweetness. A finishing step using a blender aerates the soup, giving it a light, foamy texture that is smooth and creamy — somewhere between a broth and a potage. The noodles are an original egg noodle developed specifically for Hakkeisha, with a silky finish and a chewy bite that pairs well with the rich yet light broth.

Flavor-changing midway through the meal is encouraged, with lemon or apple vinegar available at the table. After finishing the noodles, the remaining soup can be turned into "Rizo-meshi" — a rice dish with cheese and black pepper. The collagen-rich bone broth is also highlighted as a choice for those conscious of digestive health and beauty.

Torinoiro focuses on grilled chicken wings as its signature item. Domestic chicken wings are seasoned simply with salt made from the brine component of deep ocean water from Rausu (Rauship), then coated in a blend of spices before being slowly roasted in an oven. Roasting rather than frying renders out excess fat while maximizing the natural umami and aroma of the chicken. A single order of wings comes as 12 pieces, making for a visually striking and filling spread on the table.

Other items include thigh karaage marinated in a seasoning base of salt, garlic, soy sauce, and ginger — with a crispy exterior and juicy interior — as well as "Sara-yakitori," a new take on yakitori served on a plate rather than a skewer, making it easy to share and enjoy hot off the grill.

A bowl built on the concentrated richness of slow-cooked chicken, blended with the sweetness of pork bone broth. The result is mellow yet deep in flavor. Lemon and apple vinegar are available for flavor variation toward the end of the bowl.

The original chicken paitan base combined with miso brewed in Hokkaido, finished with a topping of fresh ginger.

Spicy Miso Chicken Paitan Ramen — ¥950

The miso paitan's richness and umami are further amplified by Hakkeisha's original "Kara-dama" (spice ball), whose balanced heat and depth of flavor make for an addictive combination.

Sets that include the "Rizo-meshi" finish (remaining soup with cheese and black pepper over rice) and sets with karaage are also available.

Torinoiro — Recommended Menu

Chicken Wings (12 pieces) — ¥1,280

A generous serving of wings slowly roasted rather than fried, cutting excess fat while retaining collagen. Simple seasoning lets the natural flavor of the chicken come through.

Domestic chilled chicken thigh marinated in salt, garlic, soy sauce, and ginger, coated in potato starch and fried to a crispy, crunchy exterior with a juicy interior.

Sara-Yakitori — from ¥480

A new take on yakitori served on a plate instead of a skewer — covering items like liver, tsukune, and vegetables — easy to share and enjoy hot from the grill.

The drinks menu includes a lemon sour made specifically to pair with chicken wings, draft beer, highball, and frozen sours with plenty of fruit.
