HAKODATE Uminokaze (海峡の風), a 56-room hotel in Yunokawa, Hakodate, Hokkaido, has introduced a new summer menu at its sushi kaiseki restaurant Blue Seasons. Available from June 2026, the "Blue Seasons 2026 Summer MENU" takes a stylish Wine & SUSHI kaiseki approach inspired by New York-style sushi bars, bringing together the finest local seafood with culinary techniques from France, Italy, Spain, China, and beyond.

The course unfolds across eight chapters, each designed to express Hakodate's summer scenery through food. It opens with an original cocktail themed around "Summer in Hakodate," followed by a chilled corn potage soup that evokes the warmth of the season.

From there, guests move through appetizers inspired by global cuisine before arriving at a new-take SASHIMI course that goes well beyond the usual soy sauce pairing.

Among the highlights are "Maguro Kakigori" — shaved ice with tuna, evoking Hakodate's famous night view — and "Shinnika & Melon Ikasou Somen," a dish of squid and melon in a noodle presentation inspired by the traditional squid-fishing fires (ikasou) that dot Hakodate Bay at night.

The course climaxes with a section titled "World's SUSHI," offering nine sushi pieces featuring ingredients from Hokkaido's 道南 (southern Hokkaido) coastal waters. Rather than the conventional soy sauce pairing, each piece is matched with smoked salt, lemon salt, orange oil, or sudachi oil, expanding the horizon of what sushi can be.
