Hiramatsu Corporation (Headquarters: Shibuya, Tokyo; President & CEO: Kazuyasu Misu) will open a new restaurant, "HRMT STAGE," in Ebisu, Tokyo, on Saturday, February 21, 2026.

"HRMT STAGE" is positioned as a new stage to reflect upon, reconstruct, and pass on to the next era the restaurant traditions that Hiramatsu has cultivated over many years.

The interior design was created by design office nendo (Representative: Oki Sato).

The Meaning Behind the Name - What is "HRMT STAGE"?

The name "HRMT STAGE" is derived from letters extracted from the company name Hiramatsu, embodying four meanings: Harmony, Restructure, Moment, and Tradition.

Through the harmony of diverse chefs and staff who gather across culinary genres, we reflect upon the traditions that Hiramatsu has cultivated over more than 40 years and reconstruct them into a form suitable for the modern era.

We aim to nurture happy moments where diners and creators face each other and sensibilities intersect.

These are the sentiments embedded in the name.

"HRMT STAGE" aims for cuisine characterized by clear, refined flavors symbolized by stocks and broths.

We combine the techniques that Hiramatsu has cultivated, ingredients carefully selected by chefs from across the country, and the creativity of multiple chefs to present a new vision of Hiramatsu cuisine.

French cuisine centered on carefully and delicately prepared umami and sauces will be offered both as course menus and à la carte.

The restaurant offers a casual, approachable style for guests to enjoy comfortably.

Interior Design Born from the Concept

The interior design of "HRMT STAGE" was created by design office nendo (Representative: Oki Sato).

True to the restaurant name "STAGE," the concept is a stage where chefs, staff, and each guest become the protagonists. The space is composed to naturally highlight cuisine and human movement without relying on excessive decoration. With an open kitchen and counter as the centerpiece, the sounds, aromas, and gestures of cuisine preparation become part of the experience, bringing out the power of the cuisine itself that Hiramatsu has cherished.

Tradition and innovation, stillness and motion, tension and comfort - by delicately harmonizing these opposing elements, we create a memorable restaurant experience unique to "HRMT STAGE."
