Hotel Metropolitan Edmont Tokyo (location: Iidabashi, Chiyoda-ku, Tokyo; General Manager: Masaaki Kobayashi) welcomed the opening of its directly operated French restaurant "FOURGRAINS" on January 13, 2026. The restaurant presents a signature specialty as an amuse-bouche to open dinner service: "Petite boule de foie gras saveur de cafe FOURGRAINS," a small ball of foie gras with coffee flavor. This innovative combination delivers a unique experience of bliss.

This dish features foie gras shaped into a small sphere, layered with coffee-flavored milk jelly, and finished with a coating of coffee jelly.

The creation draws inspiration from two sources: Chef Nakamura's 1985 opening specialty "Foie Gras Peach Style" and the dish "Sautéed Foie Gras with Espresso Flavor" that Chef Iwasaki served at Hotel Metropolitan Marunouchi's "Dining & Bar TENQOO." Chef Ikeuchi has elevated these concepts with the theme of inheritance to create this new FOURGRAINS specialty.

Chef Eiji Ikeuchi

Chef Eiji Ikeuchi

Born in Ibaraki Prefecture in 1972. After graduating from culinary school (Ecole Culinaire Kunitachi), he joined Hotel Edmont (now Hotel Metropolitan Edmont Tokyo) in 1992. In banquet cooking (Western cuisine), he studied under Katsuhiro Nakamura, the first Japanese chef to earn a Michelin star, experiencing all departments from ingredient procurement to dish finishing. In 2007, he was appointed Deputy Chef at Hotel Metropolitan Marunouchi's "Dining & Bar TENQOO," training under Chef Hitoshi Iwasaki. He became Chef of "Dining & Bar TENQOO" in July 2016. In April 2023, he was appointed as the third Executive Chef of "TRAIN SUITE Shiki-shima." In December 2025, he assumed the position of Chef at Hotel Metropolitan Edmont Tokyo's "FOURGRAINS."

About the Original FOURGRAINS

Opened on June 30, 1985, coinciding with the opening of Hotel Edmont (now Hotel Metropolitan Edmont Tokyo). The first chef was Katsuhiro Nakamura, current Executive Honorary Chef, who served until 1999. The restaurant operated with the philosophy of "delicious communication between chef and guests" in a casual atmosphere reminiscent of Parisian street corners, while maintaining traditional French culinary techniques. The restaurant closed in June 2012.
