Hitobito, a Bread-Led Deli From BREAD, ESPRESSO &, to Open in Osaka's Dojima in Late November

A new delicatessen where bread takes the starring role, Hitobito (日と々と), is scheduled to open on the first floor of the Shin-Daibiru Building (新ダイビル) in Dojima, Osaka, in late November 2026.

The shop comes from the group that runs 79 stores in Japan and overseas, including the Omotesando bakery cafe BREAD, ESPRESSO &. It is the group's first brand to incorporate elements of a delicatessen.

Inspired by New York's deli culture, Hitobito is a bakery's take on the delicatessen. Healthy breads, starting with bagels, are the main attraction, alongside a selection of deli dishes to choose from and pair with them.

The shop will also serve as a central kitchen and will be the group's largest store. Baked sweets that go well with coffee and homemade gelato are also on the menu. Hitobito aims to be a "usual" spot for people going about the city, from office workers to travelers.

BAKERY + DELICATESSEN

The concept is "BAKERY + DELICATESSEN," offering healthy and flexible food choices that fit into everyday life.

  • A delicatessen where bread takes the lead

In New York, delis are part of the city's everyday infrastructure and community hubs where many kinds of people cross paths. Deli dishes are traditionally the stars of that culture. Hitobito looks at it from a bakery's point of view, putting bread in the lead and lining up deli dishes to choose and pair with it, in the business district of Yodoyabashi and Dojima.

  • Comfort food for busy days

The food is meant to satisfy the heart as well as the stomach.

  • A third place with human warmth

Regulars can be greeted with "The usual?" at the most familiar spot between home and work.

  • The group's first brand with deli elements

Building on the bread-making developed at BREAD, ESPRESSO &, the shop deliberately leaves out the signature product, "Mu" (ムー). Instead, it takes on a style in which bread and deli dishes are enjoyed together, making it the group's first brand to bring in elements of a delicatessen.

The expected customers are office workers, people enjoying time to themselves, and travelers from Japan and overseas.

Enjoying Hitobito Through the Day

The star of the shop changes with the time of day, from morning to noon to afternoon.

  • Morning: "Bagels and coffee." The offering is meant to fit into the daily routine of busy office workers.
  • Lunch: "Sandwiches and soup." Even within a limited lunch break, the shop aims to serve meals that are quick yet uncompromising.
  • Afternoon: "Baked sweets and gelato." A chance to take a short break and enjoy the slower part of the day.

Menu Details

Bakery

Bread is the star of the shop. The lineup centers on healthy breads made with rye, whole wheat and other ingredients, with care given to both ingredients and methods.

The signature item is the bagel. Boiled once before baking, it has a chewy texture and a satisfying bite. Because it uses almost no fat or oil, it is low in fat yet filling, making it a good fit for breakfast or lunch.

Long-fermented breads and breads that go well with meals are also planned, so that they can be enjoyed with the deli dishes.

Gelato

Delicatessen

The deli dishes are made to be enjoyed with bread. Customers pick what they like from the dishes in the showcase and combine them freely with bread.

  • Main deli: Mainly meat dishes such as pastrami and roast chicken, which can go in bread or be eaten on their own.
  • Cold deli: A wide range from classic salads such as coleslaw and potato salad to marinades and pickles.

Roasted and grilled vegetable dishes that bring out the flavor of the ingredients also line the case, to be combined freely according to the mood of the day.

Baked Sweets

The lineup focuses on baked sweets that go well with coffee, such as financiers, scones and chocolate chunk cookies, along with variations using different combinations of ingredients.

They can be enjoyed in the store with coffee. Gifts such as cookie tins, drip bags and baked-goods boxes, as well as jam, are also available.

Gelato

The gelato is homemade in the central kitchen inside the store.

Drinks

In addition to espresso made with the group's own roasted coffee beans, a variety of other drinks are planned.

Space and Interior

The store is on the first floor of the Shin-Daibiru Building, facing a public open space rich in greenery. As the group's largest store, which also serves as a central kitchen, it makes use of the existing space while greatly strengthening its eat-in function.

  • The largest kitchen area in the group, which doubles as a central kitchen
  • About 40 seats indoors alone, in an open glass-walled space facing the terrace
  • A bold stripe pattern on a brick wall, expressing newness in the brand colors
  • A refrigerated showcase and a dipping case, creating a corner for deli dishes and desserts
  • A self-pick style, where customers choose the bread and deli dishes they like and pay at the register
