HOKKAIDO BROWN CHEESE, a Hokkaido-based craft sweets brand by GOOD NEWS Co., Ltd., is opening its second location at New Chitose Airport on Friday, February 27, 2026. The brand debuted last August and now brings its signature premium sweets to the airport, offering travelers — both domestic and international — a distinctive new Hokkaido souvenir option.

About HOKKAIDO BROWN CHEESE

When cheese is made from fresh milk, roughly 90% of what remains is whey (lactoserum). Although edible, whey has had limited practical uses and has often been traded at low prices. Seeking a more meaningful application for this by-product, HOKKAIDO BROWN CHEESE was born — a brand that delivers the unique flavor of brown cheese, created by slowly simmering whey over many hours, in confectionery form.

Brown cheese contains no added sugar, yet has a subtle caramel-like sweetness along with a complex flavor profile. It also lends itself well to confectionery production and has good shelf life, making it a compelling ingredient for a new iconic Hokkaido sweet.

With a storefront at New Chitose Airport, the brand aims to share both the appeal of Hokkaido dairy products and the value of whey with people passing through the region.

About North Plain Farm

The brown cheese used in HOKKAIDO BROWN CHEESE products is made from whey generated during cheese production at North Plain Farm, located in Okoppe Town, Monbetsu District, Hokkaido. North Plain Farm raises dairy cows through organic pasture farming, letting them roam freely on the land.

Its popular "Okoppe Organic Milk" has used the same low-temperature pasteurization, non-homogenization method since the farm's founding, preserving the natural flavors of the milk. No additives are used in any of the dairy products. Operating as a small, close-knit team, the farm has realized a circular dairy farming model.
