Restaurant & Sweets "Hana no Yousei" at Hotel New Akao in Atami, Shizuoka, is set to launch two new parfaits on June 1, 2026. The new additions are the "Izu New Summer Orange Parfait Scent of Early Summer" and the "Two Types of Rich and Fragrant Mango Parfait Essence of Izu Lemonade," both made with locally sourced seasonal ingredients from Shizuoka and Izu.

The café's classic interior frames a full panoramic view of Sagami Bay through large windows, where the scenery shifts with the time of day and the season. The two new parfaits are designed to complement that setting, offering guests a way to experience the transition from early summer to full summer through both sight and taste.

Izu New Summer Orange Parfait

This parfait centers on the New Summer Orange, a citrus variety celebrated in the Shizuoka and Izu region. The glass is layered with jelly made from the fruit's juice and pulp, alongside a compote gently simmered in Izu wine, offering a refreshing sweet-tart flavor with a bright, fragrant aroma.

A fluffy chiffon cake made with Shizuoka-grown black tea is paired with fromage blanc mousse lightly scented with New Summer Orange, bringing together the citrus's clean acidity and a creamy texture in a natural harmony. Rich vanilla ice cream and chocolate ice cream made with New Summer Orange zest are layered on top, deepening the citrus finish.

A florentine tuile, baked to a golden crunch, completes the parfait with a light texture and caramel-nut flavor that highlights the citrus notes throughout.

Two Types of Rich and Fragrant Mango Parfait

This summer-limited parfait brings together two distinct mango varieties: the apple mango, known for its rich aroma and deep sweetness, and the Thai mango, prized for its bright, fresh sweetness. The combination delivers a full tropical fruit experience across the entire glass.

Nestled at the base is a specialty mango jelly made with "Izu lemonade" — produced from Izu-grown lemons — and young ginger, whose subtle heat and refreshing fragrance balance the mango's richness. Smooth coconut blancmange, mango sauce, crunchy streusel, and coconut sablé are layered throughout, offering different textures and flavor contrasts with every bite.

The parfait is finished with Izu lemonade madeleines, mango dacquoise, a delicate mango tuile, and leaf-shaped langue de chat cookies, giving it an elegant and refined appearance.
