Hotel Nikko Kansai Airport, directly connected to Kansai International Airport in Izumisano City, Osaka Prefecture, will host "The Brasserie Buffet - A Rich Time with Local Ingredients and Chef's Special Touch" at its all-day dining restaurant "The Brasserie" from February 3 (Tuesday) to March 29 (Sunday), 2026.

Since 2018, the hotel has collaborated with the Agriculture, Forestry and Fisheries Division of Izumisano City Hall to promote local vegetables through various dishes at "The Brasserie" during this season.

This year features three special menu items using seasonal Matsunami cabbage, available only in February. These dishes were created by students from three local high schools - Osaka Prefectural Sano High School, Osaka Prefectural Sano Technical High School Cooking Club, and Osaka Prefectural Hineno High School Handmade Club - under the supervision of Executive Chef Koichi Iguchi. The recipes showcase the cabbage's "umami," "texture," and "sweetness" through the creative ideas of students combined with Chef Iguchi's culinary expertise.

Additional menu items include "Izumisano Mizunasu and Apple Vichyssoise with Sake Lees and Yuzu Sauce," "Awaguro Beef Roast Beef" (available on Saturdays, Sundays, and holidays in February only), and "Mizunasu Western-Style Deep-Fried Dish with Kale Genovese Sauce" (March only).

To maximize the umami of Matsunami cabbage, instead of cooking all ingredients together, we deliberately cook them separately and then combine them, bringing out the maximum flavor.
