MoonLight Hokkaido Bistro & Bar, situated on the 26th floor of Sapporo Hotel by Granbell, is hosting a special 1st anniversary dinner on April 18 (Saturday) and 19 (Sunday), 2026. Reservations opened on March 13.
The restaurant, built around the concept of "French cuisine drawing on a wide variety of Hokkaido-grown and seasonal ingredients," sits at the top of the hotel with panoramic views of the Sapporo cityscape at night. To mark its first year, the kitchen team has prepared an exclusive course to bring the essence of authentic French cooking to a wider audience.
Course Highlights
The anniversary menu spotlights a carefully selected lineup of premium ingredients: rare blue lobster from France and Europe (Homard bleu), Tokachi herb-raised beef prized for its rich flavor, and Hokkaido shellfish staples such as scallops in the shell and Japanese surf clams (Hokigai).
Two dishes in particular showcase the team's mastery of classic French technique. A house-made Pâté en croûte — a homemade pâté that takes three days to complete, wrapped and baked in pastry — and a warm Bouchées à la reine (Vol-au-vent) filled with Japanese surf clams are both crafted from scratch following traditional French methods.
The evening is accompanied by a live violin performance, with optional wine pairings available to complement each course.

Prices include 10% consumption tax and service charge. Seats are limited and reservations are taken on a first-come, first-served basis.

The Chefs
Head Chef: Koki Furukawa
Born in Sapporo, Furukawa refined his craft at hotels across the city before being appointed head chef at the sky restaurant "Rondo" at Century Royal Hotel in 2016. In 2018, he received recognition from "Les Disciples d'Auguste Escoffier," the successor organization to Auguste Escoffier — regarded as the highest authority in French cuisine. He joined Sapporo Hotel by Granbell as head chef in 2025.

On the occasion of our first anniversary, I have prepared a special course that draws on the rich produce and seasonal bounty of Hokkaido, as a gesture of appreciation to our loyal guests. While honoring the traditions of French cuisine, each dish carries the heartfelt intentions of our kitchen team. We hope to deliver a truly special experience.
Sous Chef: Ryo Yokohama
Also from Sapporo, Yokohama joined Sapporo Prince Hotel in 2014 and built diverse experience across restaurants, banquets, buffet dining, and teppanyaki. In 2019, he won the Hokkaido-wide IH Cooking Competition and received the Hokkaido Governor's Award. He repeated the achievement in 2023 at the 58th Hokkaido Culinary Skills Competition, again taking the Hokkaido Governor's Award. He was appointed head chef of French restaurant "Le Trianon" at Sapporo Prince Hotel in 2024, before joining MoonLight Hokkaido Bistro & Bar as sous chef in 2025.

I have composed this course with careful attention to drawing out the full character of ingredients shaped by Hokkaido's rich natural environment. Using French culinary technique as the foundation, I have expressed the individuality, aroma, and layered flavors of each ingredient one dish at a time.
