Italian Region — A Culinary Journey through Southern Italy

Le Pristine Restaurant Tokyo's popular "Italian Region" series explores the food culture of Italy's regions one chapter at a time. The third chapter, running from July through September 2026, focuses on three southern Italian regions: Puglia, Sardinia, and Sicily.
Puglia, facing the Adriatic Sea, is celebrated for its rustic, hearty cooking made with wheat, olives, and vegetables. Sardinia is known for the deep, savory character of bottarga and sheep's milk cheese, rooted in the region's maritime and pastoral culture. Sicily is defined by its bright, festive food traditions, blending citrus, seafood, and nuts. Drawing on firsthand experiences in these regions, chef Sergio Herman channels the flavors of southern Italy through Japanese seafood and seasonal local ingredients.
