Italian Regions — A Gastronomic Journey Through Italy with Sergio Herman
The "Italian Regions" series at Le Pristine Restaurant Tokyo explores Italy's food culture region by region, reinterpreted through the perspective of Michelin-starred chef Sergio Herman. In May and June, the second chapter shifts the stage to Tuscany and Liguria.
Tuscany, centered on Florence and its rolling hill country, is known for the spirit of cucina povera (humble home cooking) — simple regional dishes making the most of flavorful vegetables, beans, cheeses, and other familiar ingredients. Liguria, home to the dramatic coastlines of the Cinque Terre, features light Mediterranean cuisine that draws on its geography between sea and mountains, making generous use of fragrant basil and other herbs, fresh vegetables, olive oil, and seafood. The common thread running through Herman's course is "respect for ingredients" — treating vegetables and herbs as the backbone of each dish rather than relying on elaborate technique, drawing out the purity and harmony of each element.

The course opens with Zucchini Carpaccio, a dish that lets the umami of thinly sliced zucchini — a quintessential Tuscan summer vegetable — shine through, layered with the mild bitterness of artichoke, the richness of pistachio, the saltiness of green olive, and depth from Pecorino Toscano. The highlight of the course, Cannelloni with Pesto Genovese, draws inspiration from the traditional Ligurian method of slowly grinding fresh basil by hand with a mortar and pestle. Herman was captivated by this technique after meeting an artisan in the region who still makes traditional mortars and pestles, discovering how the delicate fragrance and vibrant green color of basil can only be fully realized through this unhurried process. The dish wraps ricotta and spring vegetables in cannelloni, finished with a basil, olive oil, and aged-cheese pesto, topped with langoustine reminiscent of Herman's hometown of Zeeland. It is a defining expression of Le Pristine's philosophy of "New Italian," rooted in Italian tradition yet elevated through Herman's own sensibility.

Involtini, a reinterpretation of a Tuscan home-cooked dish, wraps black pork in savoy cabbage with rosemary and serves it alongside a cream of cannellini beans. The main course of domestic Akaushi beef draws on Tuscany's tradition of beef served at celebratory occasions, paired with wagyu bresaola and herb-fragrant salsa verde, with white asparagus, fermented garlic, and black sesame creating a dialogue between Italian and Japanese culinary cultures. The dessert, Lemon Confit, brings a nod to Liguria's citrus traditions — smooth stracciatella gelato with citrus fragrance and the richness of pine nuts, leaving a refreshing finish reminiscent of Mediterranean sunshine.
Executive sommelier Satoru Mori has selected wines from Tuscany, Liguria, and beyond to complement each course.

The centerpiece sweets, the Seasonal Crostatine, are offered in two varieties. The Shine Muscat Crostata highlights the grape's distinctive floral fragrance and clean sweetness through a white chocolate ganache with sake lees, lightened with pistachio and a refreshing accent of yuzu — an elegant and layered Japanese-inspired flavor profile. The Musk Melon Crostata features the aromatic richness of fully ripe melon as its star, paired with light ricotta cream and the citrus nuance of limoncello, harmonized with the freshness of basil and the gentle sweetness of pine nuts for an uplifting early summer dessert.
