Starting July 7, 2026 — a date known as "Sette Day" (7/7) — Trattoria Sette on the second floor of Hyatt Regency Kyoto is launching a limited-time pizza collaboration with Tomohiro Togo, the owner-chef of Pizzeria Napoletana Don Ciccio in Fushimi, Kyoto. The event runs through August 7, 2026.

Trattoria Sette takes its name from "sette," the Italian word for "7," referencing Shichijo Street (七条通) that runs in front of the hotel. Chef Togo is a Trattoria Sette alumnus, and for this one-month collaboration he has crafted original pizzas that incorporate Kyoto's local ingredients and the flavors of summer.

Shirasu and Kujo Negi Marinara

Price: ¥3,500 (tax and service charge included)

This pizza takes "Neginara" — an original menu item from Pizzeria Napoletana Don Ciccio — as its base, adding shirasu (whitebait) for a distinctly Kyoto-inspired result. The pie is baked with tomato sauce, oregano, Kujo negi (Kyoto green onion), shirasu, garlic, and olive oil, then finished with a light sprinkle of Kyoto's black shichimi spice. Its character comes from the savory depth of shirasu, the sweetness of roasted Kujo negi, and the fragrance of black shichimi.

Price: ¥3,500 (tax and service charge included)

A vibrant, summery pizza built on a seasonal corn sauce, with ricotta cheese folded into the cornicione (the outer crust edge). After baking, it is dressed with mortadella, stracciatella, basil, and Grana Padano for a flavor profile that is rich yet light. The recipe is an evolved take on "Mais 2024," a pizza Chef Togo entered into a competition two years prior, updated and renamed "Mais 2026" exclusively for this collaboration.

Summer Collaboration Set

Price: ¥4,900 (tax and service charge included)

This set presents Chef Togo's pizza as part of a course alongside a starter and dessert, and offers good value for experiencing the collaboration. Guests choose one pizza from the two options.

About Chef Tomohiro Togo

Chef Tomohiro Togo

Born in Osaka in 1982, Chef Togo began his culinary career at a Western-style restaurant in Osaka before training in Naples, Italy. Drawing on the techniques and sensibilities refined abroad, he opened Pizzeria Napoletana Don Ciccio in Fushimi, Kyoto, where he serves traditional wood-fired Neapolitan pizza alongside seasonal Kyoto ingredients and a locally sourced philosophy. He has claimed titles at competitions including the Japan Championship of the World Neapolitan Pizza Makers Championship and the Asia Cup, and currently serves as a judge at these events as well.
