Premium, thickly-cut pork from Kyoto — known as "Kyoto Mochi Pork" — is rolled together with fragrant herbs and slow-roasted to yield a moist, tender result. Kyoto Mochi Pork is raised on a feed that includes bread, giving it a characteristically chewy texture, gentle sweetness, and fine-grained meat quality.
