Hyatt Regency Tokyo, which celebrated its 45th anniversary in September 2025, introduces its latest collaboration with Pierre Hermé Paris from February 1, 2026. The hotel presents a spring afternoon tea and a new casual dessert style called "Café Gourmand" for a limited time.

This fifth collaboration with Pierre Hermé Paris features the theme "Floral Infusion - Spring Awakening," offering seven elegant sweets that evoke the arrival of spring, five savory dishes made with seasonal ingredients, and free-flowing drinks.

Additionally, the new "Café Gourmand" style makes its debut, allowing guests to enjoy four Pierre Hermé Paris sweets with their choice of drink without reservations.

The sweet selection includes Pierre Hermé Paris signature items: "Ispahan" featuring rose, lychee, and raspberry; "Petits Fours Aurora" with hints of bergamot and rose; and the glass dessert "Emotion Envie" with flavors of cassis, vanilla, and violet, all announcing the arrival of spring with delicate flavors.

Additional offerings include "Petits Fours Tarte Infiniment Pistache" layered with rich pistachio aroma and "Tarte Fine au Chocolat Caraïbe," showcasing Pierre Hermé Paris's distinctive world through a vibrant, colorful lineup that creates an elegant afternoon experience.

The savory course is presented in a light, course-style format reminiscent of spring's new growth.

The menu begins with a cauliflower mousse tartlet appetizer, followed by colorful seasonal ingredients in "Pumpkin Velouté," "Swimming Crab Salad" with citrus notes, and main dishes including "Lobster Roll" and "Iberico Ham and Truffle Toasty," offering a lineup of light, fragrant spring flavors.

These savory dishes combine ingredients that evoke the budding season with the hotel's careful attention to detail, creating refined and satisfying offerings.
