The seasonal menu is themed around "a moment to nourish the heart and body with tea," featuring refreshing combinations of seasonal fruits with matcha and a cold tea-based rice dish designed for the warmer months.

Kyo-fu and Warabi-mochi Matcha Parfait Mango & Passion Sauce

A summer-limited parfait using premium matcha from a long-established Kyoto tea house. Chewy kyo-fu (Kyoto wheat gluten), warabi-mochi (bracken starch mochi), and cooling agar jelly bring together the distinct textures of traditional Japanese ingredients in a single bowl. Mango and passion fruit add a bright, fruity acidity that highlights the depth of the matcha's umami.
Cold Matcha Lemon Soda Float

A summer-limited drink that pairs selected matcha with refreshing lemon soda. The gentle bitterness of the matcha, the zesty freshness of lemon, and the fizz of sparkling water come together for a light, easy-drinking combination well suited to hot weather. A smooth matcha float on top adds a dessert-like quality to each sip.
Iyemon Dorayaki with Fragrant Perilla and Anko Butter

A Japanese-Western fusion dorayaki featuring Tokachi-grown whole-grain bean paste mixed with chopped perilla, filled together with butter and brown rice dango. The refreshing aroma of perilla plays off the richness of the anko and butter, building a layered, nuanced flavor. Hojicha gelato is served on the side, and an optional pairing with cold-brew concentrate tea is available. Drinking the tea directly from the glass — without a straw — allows the full aroma and umami of the tea to come through.
Salted Koji Tuna and Kamaage Shirasu Cold Ume Ochazuke

A chilled ochazuke made with brown rice tea, seasoned with Kishu Nanko-ume (plum) and kombu for a gentle, rounded saltiness. Tuna marinated in salted koji brings out natural umami, paired with fluffy kamaage shirasu (whitebait). The dish starts as a marinated tuna bowl with tororo (grated yam) and condiments, then transforms as chilled tea is poured over to finish.
