Matsuya Foods is set to open "Matsuya PREMIUM," its first-ever permanent location inside a department store, on the basement level of Matsuya Ginza. The new store opens on June 10, 2026, as part of the chain's 60th anniversary celebrations.
The project originated from a connection between the two companies sharing the "Matsuya" name — Matsuya Ginza, which marked its 100th anniversary in 2025, and Matsuya Foods. Originally conceived in 2019, the collaboration was put on hold due to the COVID-19 pandemic before finally materializing with a limited-time pop-up that drew a record-breaking response. Now, the permanent store is ready to welcome guests.
The store concept draws on Matsuya Ginza's guiding theme of "luxury and approachability," aiming to deliver an experience unique to this location.

A Matsuya Ginza–exclusive gyudon using Kobe beef. The beef is prepared using a proprietary cooking method to bring out its flavor, and the sauce blends Matsuya's original gyudon tare. Domestic onions and pickled ginger are used as garnishes.
③ Domestic Wagyu Hamburg Steak with Umami Tomato Sauce — ¥1,681
A hamburg steak made with domestic black-haired wagyu, topped with a soft-boiled egg from the "Maximum Koitamago" brand, known for its rich yolk. The patty is blended to keep its tenderness even when cool, while the umami tomato sauce is formulated to complement the wagyu's natural flavor.
④ Snow-Country Pork Tonteiki — ¥1,681
A generous 150g cut of domestic pork raised in snowy regions, prized for its sweet fat and tender texture. Served with Matsuya's original tonteiki sauce and topped with fried garlic as an accent.

Based on the beloved "Founding Beef Curry," this version is enriched with a generous portion of boiled beef for deeper flavor. Classic Matsuya pairings like "Kare Gyu" and "Hamburg Curry" are reimagined here with Kobe beef and wagyu hamburg.

Premium Presentation and Ambiance
Dishes are served in falcata wood "wappa" containers with a decorative paper wrap and eco-conscious packaging. Staff wear stylish brown vest uniforms and complete Matsuya PREMIUM–specific hospitality training to provide department store–level service and product knowledge.
The store interior features a bold combination of black and warm wood tones, accented by a gold logo that conveys the quality and presence appropriate for a department store setting. A showcase displays beautifully arranged food samples, offering customers a sense of discovery and occasion that differs from a standard Matsuya restaurant.
