mesm Tokyo, Autograph Collection (Minato-ku, Kaigan 1-10-30), a modern luxury hotel that resonates with the energy and rhythm of Tokyo and offers creative experiences in a refined setting, will serve a special pairing menu called "Autumn Melody Amuse-Bouches – Mimurosugi and Five Flavors" (秋奏のアミューズ~みむろ杉と五つの味わい~). The menu is available for 20 days, from Friday, October 30 to Wednesday, November 18, 2026, at Club mesm, the private salon on the hotel's 25th floor that is normally reserved for hotel guests.
About the Pairing
The menu is the hotel's contribution to "SAKE COMPETITION 2026 Top-Winning Sake 'Mimurosugi': Autumn Sake and Gourmet Hopping in the Keihin-Tohoku Line Tokyo Bay Area" (SAKE COMPETITION 2026 最優秀酒『みむろ杉』秋の美酒美食ホッピング in 京浜東北線 東京湾岸エリア), an event organized by JR East. For this limited period, Club mesm opens to non-guests on a fully reservation-only basis, with just five servings a day. In the private salon, which has views of the Tokyo Bay coast, the menu pairs "Mimurosugi Dio Abita" (みむろ杉 Dio Abita), a sake brewed by the long-established Nara Prefecture brewery Imanishi Shuzo (今西酒造), with five amuse-bouches made with seasonal autumn ingredients.
The pairing is supervised by Culinary Meister Kouki Kumamoto (隈元 香己), a winner of the Prosper Montagné International Culinary Competition (プロスペール・モンタニエ国際料理コンクール), a prestigious French cooking competition. Kumamoto's bistronomie-style cooking, built on the traditions and techniques of classic French cuisine and enriched with free-spirited ideas, is normally served at the hotel's 16th-floor French dining restaurant, Chef's Theatre. For this menu, set in Club mesm, whose concept "JAPAN FLOW" expresses Japanese aesthetics in a contemporary way, French techniques are combined with Japanese ingredients and sensibilities to create a new marriage of Japanese and Western flavors that brings out the appeal of Mimurosugi.
The menu also supports JR East's efforts to promote the appeal of the Greater Shinagawa area (広域品川圏). During the period, a digital rally is held across three designated areas: WATERS takeshiba, TAKANAWA GATEWAY CITY, and OIMACHI TRACKS. Visitors who enjoy the pairing menus in two or more of these areas can enter a lottery for one of 100 prizes of limited-edition new Mimurosugi sake. Details are available on the event page.
