MIMURE (ミムレ), a new concept area at NEWoMan Takanawa — the largest NEWoMan development to date — is set to open on Saturday, March 28. While grain-fed beef is most commonly distributed in Japan, OGAWA COFFEE LABORATORY Takanawa focuses on grass-fed beef, which is gaining attention for its high protein and low fat content. Yoshida Farm, nestled in the mountains of Kibi-chuo Town, Okayama Prefecture, is one of Japan's few farms that handles everything from milking to cheesemaking entirely by hand. Their rare camembert cheese, prized by chefs and confectioners, has been crafted into a cheesecake by PÂTISSERIE ASAKO IWAYANAGI. The pastry shop's approach is to maximize the natural qualities of ingredients while adding nothing unnecessary — letting the full flavor and depth of Yoshida Farm's cheese speak for itself. The result is a piece that honors the artisan producers and the bounty of nature, with the hope of passing on the richness of Japanese food culture to future generations.

The gyudon (beef rice bowl) — a staple of Japanese everyday dining — gets a premium treatment here using A5-grade Hitachi beef. The aim is to revisit and rediscover the value of this beloved soul food. Hitachi beef is raised in the fertile, nature-rich lands of Ibaraki Prefecture through years of effort and refined techniques, resulting in rich flavor and exceptionally tender, finely textured meat. This bowl is a tribute to producers' dedication and the inherent power of quality ingredients.

"Hanakaze" is a craft sake by the Ine to Agave brewery in Oga, Akita. Based on the techniques of traditional sake brewing using rice and koji, hops are added to create a refreshingly vibrant aroma reminiscent of lychee and muscat. Craft sake is neither Japanese sake nor beer — it's another choice born from Japan's fermentation culture. "Hana" refers to hops (唐花草 in Japanese), and "kaze" (wind) evokes both the strong winds of Oga and the new breath being blown into the craft sake world.

Tea leaves hand-picked in the southern Kyoto region, where the Uji and Kizugawa rivers flow, are covered for over 20 days, steamed, and carefully dried in a tencha kiln. Tencha is rarely available on the market as it is normally used as the raw material for matcha — its toasty, rich flavor has long been a quiet pleasure enjoyed by tea farmers themselves. Poured into a wine glass, it shimmers pale yellow, layering the fragrance and sweetness of gyokuro with a gentle nuttiness. This bottle bridges Uji's historic tea culture with a moment of contemporary calm.

These rock oysters are raised by Yamada-san of Maruoto, an oyster farm on the Kamigoto Islands in the westernmost part of Kyushu. The Goto Islands are almost entirely designated as national park, surrounded by untouched nature. Mineral-rich runoff from the mountains nourishes an abundance of plankton, making this one of Japan's premier fishing grounds. The oysters are grown using a meticulous cultivation method over three to four years, reaching an impressive palm-sized scale.

Arare-ten Seiro (Tempura Soba) — ¥2,300 (before tax)
Matsubara-an's soba is a finely cut ni-hachi (80% buckwheat) noodle made with carefully selected buckwheat flour, whose aroma fills the mouth and pairs beautifully with a slightly sweet Edo-style broth. The tempura features "Kaisen Arare-age" (seafood tempura in arare coating), popular at the Kamakura location. The menu also includes seasonal dishes using fresh local ingredients from Kamakura, Miura, and the waters around Shonan — ideal to enjoy with sake from Kanazawa or even wine.
鮨上ル (Sushi Noboru)
Wild Bluefin Tuna Tasting — 5-Piece Comparison — ¥2,500 (before tax)
Sushi Noboru primarily uses wild Atlantic bluefin tuna caught off the coast of Ireland, one of the world's northernmost fishing grounds. Through connections at Tsukiji, the restaurant has established an independent supply route with Hokuei Foods, a specialist wholesaler in wild bluefin, ensuring a stable supply. The tasting includes chu-toro (medium fatty tuna), a marinated tuna with a secret recipe sauce, and a yuzu miso-marinated tuna created in collaboration with Sano Miso, a long-established miso specialty shop in Kameido.
Highlight 2: Limited-Time Pop-Up Shop by Happo-en

In conjunction with the opening, local establishment Happo-en is launching a limited-time pop-up shop at the 3F pop-up space "Satochi no Za." Happo-en has worked with local governments across Japan to produce and showcase regional produce through food. This time, the focus is on Fukushima Prefecture — specifically, strawberries from the end of winter into early spring, introduced alongside the careful commitment of the prefecture's farmers.
From "Kagamiishi Noen" in Kagamiishi Town, Fukushima, the shop plans to sell rare Fukushima-original strawberry varieties such as "Fukuharuka" and "Yuyake Berry" — brands difficult to find in Tokyo. A limited-edition strawberry tart featuring "Fukuharuka," created through a collaboration between "Happo-en Yōkashiten" and "Kagamiishi Noen," will also be available exclusively at this event.

Event 1: "Farm to Table" Experience at MIMURE

At "AGRIKO×MIMURE BOTANICAL Lab," an experiential farm lab using an aquaponics system, visitors can harvest herbs and flowers grown on hydroponic towers themselves, then decorate sweets — a hands-on "Farm to Table" workshop called "Make it Cake_it!" The sweets are specially baked by OGAWA COFFEE LABORATORY for this workshop. Participants can also enjoy a herbal water drink made from the herbs they harvest.
Through the harvesting experience at the farm lab — which is at the forefront of modern agriculture yet close to Japan's traditional farming methods, creating a productive environment where living creatures and plants coexist — participants gain new insights and enjoy the true essence of food.

Event 2: A Special Coffee Experience with World Barista Champions

"COFFEE ARTISANS SESSION in OGAWA COFFEE LABORATORY TAKANAWA" is a two-day special event bringing together world-class baristas. The lineup includes Jack Simpson, the 2025 World Barista Champion, and Hisako Yoshikawa, the 2013 World Latte Art Champion, among other competition-winning baristas. They will serve limited-quantity cappuccinos and signature drinks. In the evening, a charcoal-grilled food and coffee pairing dinner is also planned. It's a truly one-of-a-kind coffee experience, delivered with the spirit of OGAWA COFFEE LABORATORY Takanawa.

Event 3: A Student-Designed Music Concert

With the support of Norimichi Iijima of KOACRIATIVE — a key figure in Japan's music scene — a concert is planned for around late May that goes beyond simple performance, with the concept of "designing a space through music." Music university students themselves will consider the instruments, program, and environmental setup from scratch, taking into account MIMURE's space and surrounding environment. It's a music event designed to foster creative autonomy in the next generation of musicians.
