Starting July 17, 2026 (Friday), Nihonbashi Dashiba Honten and Nihonbashi Dashiba Hanare — both run by katsuobushi specialist Ninben — are serving two limited-time items as part of the "ecoedo Menu & Goods" lineup for the "ECO EDO Nihonbashi 2026" event: Chilled Dashi Amazake and Shrimp and Summer Vegetable Jelly. Both dishes are designed to bring a distinctly Nihonbashi sense of coolness to the summer season.
Now in its 18th year, ECO EDO Nihonbashi 2026 is a Nihonbashi tradition built around eco-friendly ways to keep cool for summer. These two chilled dishes, made with Ninben's honkarebushi dashi, offer a seasonal taste of that coolness.
Chilled Dashi Amazake

Now in its 18th year, ECO EDO Nihonbashi 2026 is built around the theme "Nihonbashi in Yukata," bringing together a variety of ways to keep cool using traditional eco-friendly ideas from the Edo period. Highlights include the "ecoedo Menu & Goods" lineup, which lets visitors taste and pick up cooling treats; "Summer Wind Chime Spots," where the sound and sight of wind chimes evoke a sense of coolness; and "Uchimizu, Nihonbashi!," a classic summer custom of sprinkling water to cool the streets. The event is especially suited to visiting in yukata.
