Provision in Roppongi Unveils Six New Early-Summer Dishes for Its June Monthly Menu

Provision, a members-only French restaurant tucked in an alley two minutes' walk from Tokyo Midtown in Roppongi, has announced its June monthly menu. The subscription-based restaurant offers a flat monthly membership that covers dining for up to four guests per visit, with no bill presented at the end of the meal. Each month, a new set of dishes is added alongside the regular menu to keep each visit fresh.

For June, six new courses have been added, drawing on seasonal ingredients to capture the essence of early summer.

June Monthly Menu

Cuttlefish Carpaccio with Sun-Dried Tomato Vinaigrette

The appetizer for June features cuttlefish (mongou-ika) at the peak of its season, served as a carpaccio. Sun-dried tomatoes — slowly dried to concentrate their acidity and umami — are worked into a vinaigrette and paired with the tender, subtly sweet cuttlefish. The delicate flavor of the fish unfolds gently on the palate, while the bright tomato aroma signals the arrival of early summer.

Gazpacho

Gazpacho

The soup course is a chilled gazpacho — a classic herald of summer. Ripe tomatoes, celery, cucumber, and other summer vegetables are marinated overnight before being blended into a smooth, refreshing cold soup. A hint of spice lifts the natural sweetness and umami of the vegetables, creating a light, invigorating bowl well-suited to the humid season.

Rock Bream Vapeur with Caviar Sauce

The fish course spotlights rock bream (ishidai), which comes into season in early summer. The fish is steam-roasted for a moist, even result, then finished with a champagne-based cream sauce whose gentle aroma and rounded richness complement the delicate white flesh. A spoonful of caviar added at the finish brings salinity and depth to the dish.

Lobster and Veal Sweetbread Oven-Baked with Tarragon Butter

The seafood main pairs lobster with ris de veau — the prized thymus of veal — for an oven-baked dish. The ris de veau is grilled until plump, then roasted in the oven alongside the lobster until golden and fragrant. A generous finish of herb butter seasoned with tarragon and parsley ties the sweetness of the lobster and the meaty richness of the ris de veau together with a refreshing herbal note.

Veal Loin Sauté with Morel Mushroom Sauce

The meat main course features a sauté of tender veal loin, slow-roasted for a moist, even cook. The sauce is a cream preparation built around morel mushrooms, reduced with a touch of sweet wine to leave a subtle lingering sweetness. The mellow flavor of the veal deepens with each bite, while the rich, fragrant sauce rounds out the dish.

Seafood Tomato Ragù with Homemade Tagliolini and French Caviar

The pasta course is a tomato ragù made with fresh seafood braised low and slow until the proteins fall apart, drawing deep umami from the sea. Seasonal Manganji peppers add a pop of accent flavor. The ragù is served over homemade tagliolini, and topped with French caviar whose fine salinity and distinctive texture quietly frame the oceanic richness of the dish.
