The Ritz-Carlton, Tokyo (located at Tokyo Midtown, 9-7-1 Akasaka, Minato-ku; General Manager: Xavi Gonzalez) is launching a comprehensive spring promotion featuring seasonal fruits and cherry blossoms. The collection includes new menu items at The Lobby Lounge on the 45th floor, special afternoon tea at Hinokizaka Teppanyaki, and spring cocktails at The Bar.
Starting February 2026, The Lobby Lounge will offer a limited-time Seasonal Market Menu featuring carefully selected strawberries. From March 2nd (Monday), a new Strawberry Parfait will make its debut, showcasing the season's arrival through vibrant presentation.
Additionally, Japanese restaurant Hinokizaka Teppanyaki will present a unique Teppanyaki Afternoon Tea combining expert teppanyaki techniques with premium tea pairings, available every Sunday starting March 1st. The Bar will feature a Spring Cocktail Collection with four original cocktails from March 1st (Sunday) through April 30th (Thursday), along with special brunch offerings to celebrate the new season.

The hotel's new Strawberry Parfait celebrates the peak season for strawberries with a completely gluten-free construction. Rice flour sponge, caramelized hazelnuts, and white chocolate crumble create textural contrast, while light Chantilly cream, strawberry sorbet, and egg yolk-free Jersey milk ice cream complement the fresh fruit. Sakura Brunch - Tomato Fair
A special brunch celebrating seasonal tomatoes features eight colorful appetizers as the opening act. Tomatoes from Misu Tomato Farm in Funabashi, Chiba are grown with minimal pesticides, showcasing harmonious sweetness and acidity. The four-course menu includes a tomato-focused appetizer, followed by a second course, main dish, and dessert, concluding with coffee or tea for a refined finale.
The second course "Eggs Benedict" features brioche topped with poached eggs, hollandaise sauce, and squid umami, creating a sophisticated interplay of individual ingredients.

These artistic libations showcase ROKU gin's six Japanese botanicals creating delicate depth, while HAKU vodka made from 100% domestic rice adds smooth sweetness and premium texture. About Nico de Soto

Nico de Soto is a world-renowned bartender who has visited 110 countries and worked in 55. Originally from Paris, he began his bartending career in 2005 and gained experience at prestigious bars in Paris, Melbourne, New York, and London. His New York bar "Mace," opened in 2015, was selected for "World's 50 Best Bars" four consecutive years and earned global recognition alongside Paris's "Danico."
Recent ventures include opening "Daroco" and "Wacky Wombat" in London's Soho. With numerous awards, he was ranked 30th in Drinks International magazine's "Most Influential People in the Industry" in 2024. Known for innovative cocktails inspired by travel and cuisine, he has also launched proprietary pandan liqueur "KOTA Pandan Liqueur," developed bar tools with Cocktail Kingdom, and co-founded Miracle Cocktails pop-ups.
