Shanghai crab, a high-end ingredient prized in autumn and winter, is prepared using the traditional technique of steaming to bring out the full flavor of the ingredient.
The crab is steamed while doused in Shaoxing wine, a traditional Chinese brewed liquor, resulting in plump meat and smooth, melting crab roe that highlight the crab's concentrated umami and aroma. It's served with a mildly tart vinegar and julienned ginger, adding a refreshing accent that complements the richness of the crab and keeps every bite enjoyable to the last.
