Risonare Tomamu, a resort hotel whose concept is a graceful stay where guests can feel the land of Hokkaido, will serve a winter-only dinner course from December 1, 2026 to March 31, 2027. The course is offered at its main dining restaurant, OTTO SETTE TOMAMU, and brings out the rich flavor of horsehair crab, Hanasaki crab and king crab.
The restaurant's concept is "Bella Combinazione," Italian for "beautiful combination." Built around the three kinds of crab and Hokkaido winter ingredients, the course has eight Italian dishes in total.
Three kinds of pairings are available to match the dishes. The alcohol pairing includes Hokkaido wines and natural wines (wines made as close to nature as possible, from growing the grapes and fermenting with natural yeast to bottling). The non-alcohol pairing makes use of herbs and spices, and the mixed pairing lets guests enjoy both.
The Winter-Only Dinner Course
Pasta: Hanasaki Crab Linguine

This warm pasta dish is built around Hanasaki crab, known for its rich flavor. When the crab shell is opened, the toasty, fragrant aroma of the crab that was sealed inside spreads with the warm steam.
The sauce follows the cooking method of ciuppin, a traditional seafood soup from the Liguria region of Italy. Both the crab meat and the toasted shell are simmered slowly to draw out the full flavor. The dense sauce and plenty of crab meat cling to the flat linguine, so the strong flavor of Hanasaki crab comes through with every bite.
Pasta: Venison and Mushroom Agnolotti

This dish takes its inspiration from "Heavy Snow Udon" (豪雪うどん), a local dish of Kutchan Town, Hokkaido, known for white, translucent noodles that resemble snow. The translucent look and chewy texture are brought into agnolotti, a traditional stuffed pasta from the Piedmont region of Italy.
The filling is venison from deer that stored up plenty of nutrition to get through the harsh winter, together with mushrooms that are slowly sautéed to concentrate their flavor. The dish is finished with a rich broth (brodo, a basic soup of Italian cooking made by simmering out the flavor of ingredients) drawn carefully from deer tendons and bones, and shaved aromatic mushrooms are added on top. The richness of the venison and the dense soup, combined with the aroma of the mushrooms inside the chewy dough, give the dish the depth of Hokkaido's winter bounty.
Enjoy the Dishes Even More With Carefully Chosen Pairings
Alcohol Pairing Example
"Horsehair Crab Wrapped in Foam With the Fresh Aroma of Finocchio" × "Sauvignon Blanc 2024" (Hamada Vineyard)

The dish layers the fresh flavors of finocchio (fennel) and white balsamic vinegar over the rich flavor of horsehair crab. It is paired with "Sauvignon Blanc 2024" from Hamada Vineyard (濱田ヴィンヤード) in Mikasa, Hokkaido. The herb-like fresh aroma typical of Sauvignon Blanc and the mellow fruit sweetness in the finish harmonize with the horsehair crab, finocchio and white balsamic, bringing out the flavors of each.
Non-Alcohol Pairing Example
"Hanasaki Crab Linguine" × black tea and white grape

The pairing for the pasta is a drink based on three kinds of black tea, including Earl Grey and Darjeeling, with white grape, cinnamon and pear juice added. It is finished to taste like a dry rosé wine. The mineral quality and fruit sweetness from the tea overlap with the concentrated flavor of the crab, making the taste feel richer.
