From July 1 to August 31, 2026, OTTO SETTE TOMAMU — the main dining restaurant at Risonare Tomamu in Hokkaido — will offer a summer-limited 8-course Italian dinner that highlights the flavors of red-flesh and green-flesh Hokkaido melon alongside other seasonal ingredients.
The restaurant's current concept, "Bella Combinazione" (Italian for "beautiful combination"), centers on drawing out the full potential of Hokkaido's diverse seasonal ingredients by pairing them in unexpected ways. This summer's menu spotlights the concentrated sweetness of fully ripe red-flesh melon in savory preparations and the clean, refreshing notes of green-flesh melon in dessert.
Summer-Limited Dinner Course Highlights
Cold Capellini with Red-Flesh Melon and Tokishirazu Salmon

One standout dish is a chilled capellini pasta that reimagines the Italian classic of prosciutto and melon through a Hokkaido lens. When the glass cloche is lifted at the table, a curl of smoke rises and mingles with the fresh fragrance of ripe melon. Both the flesh and the abundant juice of fully ripe red-flesh melon go into the sauce, capturing the fruit's layered sweetness. The pasta is finished with cold-smoked "Tokishirazu" — a rare summer salmon prized for its tender texture, delicate salinity, and rich fat — which harmonizes with the melon's natural sweetness for a deeply aromatic dish.
*Tokishirazu refers to immature chinook salmon caught early in the season, prized for its high fat content and scarcity.
Melon Meringata

The dessert course pairs green-flesh melon with three types of meringue. Crisp baked meringue and a lighter cream-and-ice mixture blended with meringue accentuate the melon's gentle sweetness, while a sponge soaked in Vin Santo — a traditional Tuscan dessert wine known for its aromatic richness — further lifts the green melon's refreshing character.
Venison Cartoccio

Summer venison is known for its lean, clean flavor and juicy red-meat richness. Taking inspiration from deer's natural preference for bamboo grass, the meat is wrapped in bamboo leaves and slow-roasted in the cartoccio style. When the parcel is opened at the table, the earthy fragrance of the grass mingles with the meat's concentrated juices. The dish is accompanied by a gratin of eggplant and venison ragù enriched with mozzarella from Farm Hoshino, an agricultural project run at the resort.

Three pairing courses are available alongside the dinner menu: an alcohol pairing featuring Hokkaido wines and natural wines, a non-alcoholic pairing using herb- and spice-forward drinks, and a mixed pairing that combines both styles.

Kids Service

A complimentary childcare service is available for restaurant guests with children aged 2 to 6. Children are cared for in a supervised play area by on-site staff while parents enjoy the full dinner course. Getting There

Risonare Tomamu is located in Shimukappu, Yuufutsu-gun, Hokkaido. The resort is approximately 100 minutes by car from New Chitose Airport, or around 90 minutes by JR (with a transfer; a free shuttle bus runs from Tomamu Station without advance reservation).
