Japanese sake brand SAKE HUNDRED (サケハンドレッド) is focusing its energy on pairing events in 2026, collaborating with celebrated restaurants to offer guests richer sake experiences. From late June through July, three exclusive pairing dinners are planned, where the sensibilities of master chefs converge with SAKE HUNDRED's premium sake lineup.

Why SAKE HUNDRED Is Focusing on Pairing Events

SAKE HUNDRED, whose brand purpose is to "fill people's hearts and enrich their lives," has long pursued the highest expressions of sake. In the past, pairing events were held at Michelin-starred restaurants such as NARISAWA. Building on that, 2026 has seen a major push into pairing experiences — with 19 events held domestically and abroad in the first half of the year alone.

Whether it's the classic pairing of sushi and sake, or sparkling sake that truly shines alongside food rather than just as a toast, sake enjoyed with cuisine carries tremendous potential. The upcoming series brings that vision to three new venues.

SAKE HUNDRED × 六本木 鮨悠: Kyoto Kaiseki Meets Sushi and Sake

On Friday, June 26, 2026, SAKE HUNDRED hosts a pairing dinner at 六本木 鮨悠 (Roppongi Sushiyu) in Roppongi.

六本木 鮨悠 offers a rare combination of sushi and Kyoto kaiseki (京懐石), crafted by its head chef who spent 30 years honing his skills at 中村楼 (Nakamura-ro), a storied traditional restaurant in Kyoto's Gion district dating back to the Muromachi period. The cuisine merges the classic techniques of Kyoto kaiseki — rooted in tea ceremony spirit and dashi culture — with seasonal ingredients and a contemporary sensibility.

The restaurant applies HACCP international hygiene standards and uses no chemical seasonings (MSG), drawing out the natural flavors of every ingredient. This combination of traditional "subtraction aesthetics" and modern scientific quality control is the hallmark of 六本木 鮨悠.

The event features an approximately 20-course menu including nigiri and à la carte dishes, with a full SAKE HUNDRED pairing throughout. Set in a calm counter-style space, the evening brings together three traditions — sushi, Kyoto kaiseki, and sake — in a singular experience.

SAKE HUNDRED × みつい (Azabu-Juban): Edo-Mae Sushi from a Storied Lineage

On Sunday, July 5, 2026, a pairing event takes place at みつい (Mitsui) in Azabu-Juban, Tokyo.

Chef Sho Mitsui trained for eight and a half years at the three-Michelin-starred restaurant 青空, then worked at 鮨祥 (Sushisho) in Nishi-Azabu before opening his own restaurant. He brings the legacy of those celebrated kitchens to his own style of exquisite Edo-mae sushi.

みつい is known for its tuna course: medium fatty tuna (chutoro) prepared with salt, lean tuna (akami) marinated in soy, and fatty tuna (otoro) finished with nikiri — each of the three pieces expressing a distinct flavor. The kitchen features a traditional stove (kamado), and the shari (sushi rice) is made with rice from Chef Mitsui's home prefecture of Nagano, cooked in an iron pot over charcoal fire. Chef Mitsui holds the sake diploma qualification and takes the pairing of sake with each piece of sushi seriously.

The event offers an omakase course of appetizers and nigiri, with a full SAKE HUNDRED pairing. In a space evoking a tearoom, guests enjoy the interplay of craftsmanship and premium sake.

SAKE HUNDRED × ふしきの (Kagurazaka): Food, Sake, and Vessels in Perfect Trinity

On Saturday, July 11, 2026, a pairing dinner is held at ふしきの (Fushikino), nestled in Kagurazaka's Hondayokocho alley.

Founded in 2011, ふしきの holds the distinction of being Japan's first restaurant specializing in Japanese cuisine and sake pairing. It has earned a Michelin Guide Tokyo star for 14 consecutive years.

The restaurant's philosophy — developed by its founder — holds that the shape of the vessel changes how sake tastes. Every dish is served with the optimal sake, sake cup, and temperature, while Kyoto culinary traditions provide the foundation. In the spirit of the tea ceremony, each course concludes with house-made sweets and matcha. The experience is designed down to the last lingering moment.

A highlight of this event is a pairing commentary by sommelier Kota Narisawa, known for his wine selection on the TBS drama "Grand Maison Tokyo" (グランメゾン東京). Narisawa collaborated with ふしきの to create a special SAKE HUNDRED course exclusively for this occasion, and will explain the pairing reasoning for each sake and dish on the night.
