SUSHIRO Cafe is bringing back its yearly collaboration with Kyoto's long-established tea purveyor Morihan. From July 3 (Friday), the "Time-Honored Tea Shop's Matcha Crème Brûlée Rare Cheesecake" goes on sale at SUSHIRO locations nationwide.

Akindo Sushiro Co., Ltd. (Head Office: Suita, Osaka; President and CEO: Kohei Nii) operates "SUSHIRO Cafe," a dessert lineup built around the concept of "delicious, exciting, and thrilling." A dedicated pastry team develops the sweets, testing more than 200 prototypes a year and selecting only their favorites to serve customers.

This year's Morihan collaboration item, the Matcha Crème Brûlée Rare Cheesecake, is supervised by one of Japan's leading tea masters. It's a Japanese-style dessert built around the rich color and aroma of carefully selected matcha, using Uji matcha in a rare cheesecake base. The cheesecake is torched with a crème brûlée finish right before serving, giving the surface a crisp, crackly texture.

Kikuoka won the National Tea Appraisal Skills Competition twice, in 1998 and 2002, and became the first person to win the Kyoto Prefecture Tea Appraisal Skills Competition three years running, from 1999 to 2001, establishing his reputation as one of Japan's leading tea masters. He has continued to win the National Tea Appraisal Skills Competition and other competitions since 2002, and earned certification as a Japanese Tea Appraiser from the Japan Tea Appraisers Association in 2009. As Morihan's head of raw material sourcing, he travels around Japan.
