The Cake & Chocolate Shop at Wako Annex in Ginza is set to release the fourth installment of its Premier series on April 1, 2026. The new addition, "Premier Fromage Fleur Blanche — White Flower —," combines four carefully selected cheeses with free-range eggs and took approximately 10 months to bring to completion.
About the Premier Series
The Premier series was created to mark truly special moments. Each cake is built around top-tier ingredients, with every layer of texture and flavor thoughtfully calculated. The cakes are also roughly 1.5 times the size of a standard slice, making them equally suited to sharing or savoring alone as a luxurious treat.
Premier Fromage Fleur Blanche — White Flower —

The cake draws on cream cheese from Normandy, France, aged Gouda from Koiwai Farm, Italian buffalo mozzarella, and domestic mascarpone. The combination produces a rich yet light melt-in-the-mouth quality. At its core sits a baked cheesecake cooked at low temperature, wrapped in a layer of mozzarella mousse, and set on a crisp streusel base that incorporates the aged Gouda. The interplay of acidity, depth of flavor, and gentle saltiness creates a taste that shifts subtly with every bite.
The cake is a permanent menu item, though daily quantities are limited.
Chef Patissier Yudai Ono

Ono Yudai became Chef Patissier at Wako in April 2024. He previously held the position of Pastry Chef at the Michelin one-star Ogasawara Hakushaku-tei and joined Wako as Sous-Chef Patissier in 2022.
