The Valentine's menu, crafted by French Chef Takagi, features a series of elegant and refined dishes that harmonize splendor and delicate beauty, perfect for celebrating this special day. The course begins with "Fresh Leonardo," a champagne cocktail made with Amaou strawberries and Moët & Chandon. Following this, guests will enjoy an amuse-bouche of sweet shrimp and caviar, an appetizer of scallop and salmon, and a warm starter featuring foie gras enhanced with the aroma of truffle. Each dish carefully brings out the appeal of seasonal ingredients.

For the fish course, lobster bisque is presented in a cappuccino style, concentrating rich flavors. The main dish features domestic beef sirloin finished with a red wine sauce infused with cacao aroma, an elegant plate befitting Valentine's Day. For dessert, the "Parfait au Chocolat" allows guests to fully savor the allure of chocolate, providing a perfect conclusion to the special evening. Additionally, the hotel's original bonbon chocolate "La Legenda," made with the globally rare Venezuelan "Chuao cacao," is presented as a limited gift exclusive to this course.

After studying at a culinary school, Chef Takagi trained at a French restaurant to establish his culinary foundation. Fascinated by France through cooking, he enrolled in a university's French language department and spent four years deepening his knowledge of France. After graduation, he joined Yokohama Bay Sheraton Hotel & Towers, working at French restaurant "Bay View" and the banquet kitchen. In 2018, he was entrusted with the role of exclusive chef for NISSAN STAR SUITES inside Yokohama Stadium, serving from its launch. In 2019, he became the top chef at the all-day buffet "Compass," and in August 2023, he assumed the position of chef at the French restaurant "Bay View," located on the hotel's top floor.

Chef Sato began his career as a pastry chef at "Maxim's de Paris" in Ginza. During 10 years of dedication, he became fascinated by the profound world of French confectionery and traveled to France. In 2000, he served as sous chef from the founding of "Pâtisserie Sadaharu Aoki Paris," which opened in Paris, and contributed to the launch of various stores in Japan. He carefully brings out the natural qualities of ingredients while combining different textured components to pursue cakes with concentrated flavors. His simple and stylish designs, avoiding lavish decoration, have earned high praise from many customers. His specialties are cakes and macarons that bring out the rich aroma and depth of chocolate. He continues to provide memorable flavors with delicate textures to many fans.

In August 2025, Chef Sato assumed the position of Pastry Chef at Yokohama Bay Sheraton Hotel & Towers. On the Sheraton stage, where guests from around the world gather, he delivers unique sweets befitting Yokohama, utilizing his international sensibility and experience.

"Chuao" is a cacao bean of high global value produced only in Chuao village, located in northern Venezuela, surrounded by mountains and sea. It possesses a fruity aroma, refreshing acidity, and elegant, deep sweetness, earning high praise from chocolatiers and pastry chefs worldwide as the highest quality cacao. This "Chuao" is also recommended by Alex Ramirez, a native of Venezuela and the official PR ambassador for Yokohama Bay Sheraton Hotel & Towers. In 2022, the shop also received the award "Tabelog Bread EAST 100 Famous Shops 2022." In recognition of his achievements in sincerely engaging with bread-making since the hotel's opening and contributing to the regional industrial promotion through product creation focusing on ingredients and manufacturing methods, he was selected and honored as a "Kanagawa Excellent Industrialist" in January 2026, a prestigious award.
