Yokohama Grand InterContinental Hotel (1-1-1 Minato Mirai, Nishi-ku, Yokohama, Kanagawa) will be offering a limited-edition melon parfait, "Parfait Melon Melon no Parfait," at the Lounge & Bar "Marine Blue" on the second floor, from Monday, July 13 to Sunday, September 13, 2026.

A Parfait Designed to Showcase the Best of Melon

The pastry chef's goal for this dessert was to create "a parfait for truly savoring the deliciousness of melon." It features generous amounts of fresh melon — in season from early to midsummer, with its juicy and melt-in-your-mouth flesh — and pairs it with lemon and lime-based sweets that complement the melon's flavor as supporting roles.

The visual concept is "melon soda." Layers of beautiful greens in varying shades are stacked to create a refreshing, summer look with the transparent clarity of melon soda.

Layer by Layer

On top of the glass sits a charming pastry filled with milk tea-flavored custard, fresh cream, and jewel-like fresh melon pieces, garnished with gold leaf-dusted crispy meringue, melon, and a white chocolate sculpture. Each visit brings a harmony of different textures alongside the juicy melon.

Inside the glass, large cuts of fresh melon are elegantly arranged. To bring out the melon's natural sweetness, they're surrounded by a refined white wine jelly.

At the center sits sour yogurt ice cream, and hidden beneath it is cassata — a chilled Italian-Sicilian dessert made with generous amounts of lemon peel and fruit. The refreshing acidity of the sour yogurt and cassata cuts through the rich sweetness of the melon and melon cream, leaving a surprisingly clean finish.

Below that, layers of thin and crispy feuilletine with a toasty flavor, vibrant lime jelly, and melon-rich melon jelly lead to a gentle and sweet panna cotta at the very bottom.
