Japan's First Square Salt Dorayaki Shop "Yunoshio" Releases Limited-Edition Shio Lemon Honey Dorayaki for Early Summer

The dorayaki specialty shop "Yunoshio" (湯ノ塩), located in the Kaike Onsen district of Yonago City, Tottori Prefecture, has started accepting online orders for a limited-time seasonal treat: the Shio Lemon Honey Dorayaki (塩レモンはちみつどら焼き). The product became available for online delivery from May 26, 2026.

A Refreshing Adult Dorayaki for Early Summer

The Shio Lemon Honey Dorayaki features lemon peel made from Hiroshima-grown lemons, paired with a white bean paste enriched with "Hyakka Hachimitsu" (百花はちみつ) — a richly flavored floral honey from Fukuda Bee Farm in Tottori City — along with smooth butter from Daisen, Tottori. The filling is finished with homemade sea salt produced by hand-drawing seawater from Kaike Beach, just a three-minute walk from the store, and boiling it over an open flame.

The result is a well-balanced combination of bright citrus, deep honey richness, and a gentle hint of saltiness — a "sophisticated adult dorayaki" that avoids excessive sweetness. The team developed the product around the concept of a "light, refreshing bite," carefully tuning each ingredient's balance, including the lingering aftertaste and how the dorayaki tastes when served chilled.

Addressing the Summer Slowdown in Traditional Confectionery

Summer is traditionally a slow season for Japanese sweets, as consumers tend to gravitate toward cold drinks and frozen treats. Yunoshio took on that challenge by creating a dorayaki refreshing enough to enjoy even in warm weather. The shop also suggests pairing it with cold tea or sparkling beverages as a new way to experience dorayaki.

Ranked #1 in the National Mail-Order Dorayaki Category

Yunoshio's dedication to local ingredients and its homemade salt have earned wide recognition. As of May 25, 2026, the shop holds the top spot in the dorayaki category on Zenkoku Otoriyose Net, a nationwide mail-order ranking platform. The shop's distinctively crispy dorayaki dough and carefully slow-cooked sweet bean paste have attracted fans from across Japan.

The shop offers frozen nationwide shipping for its products, and the limited-edition Shio Lemon Honey Dorayaki is included in the frozen delivery lineup. Gift wrapping and gift box options are also available, making it a suitable choice as a present or souvenir.

About Yunoshio — Japan's First Square Salt Dorayaki Specialty Shop

Yunoshio is known for its distinctive square dorayaki shape, designed to evoke the crystalline form of salt. A custom mold was made specifically for this purpose. Yonago City in Tottori Prefecture is said to have the world's highest dorayaki production volume, and Yunoshio aims to represent that heritage while appealing to visitors from around the country.

The shop uses Tottori-grown Dainagon azuki beans, fresh eggs from domestically raised chickens in Tottori, and locally sourced timber — including wood from trees over 300 years old — in its interior. In addition to the signature salted butter dorayaki ("Shio Kari Dora"), the lineup includes matcha and houjicha varieties made with tea from Daisen, Tottori.
