Akagi Nyugyo Co., Ltd. is revamping its ice parfait lineup and launching four new products under the Special Parfait brand starting March 10, 2026. The new series — Special Parfait Blissful Choco Vanilla, Indulgent Strawberry, Triple Cookie & Vanilla, and Double Choco Mint — goes on sale nationwide. Chef Ryosuke Sugamata of Patisserie Ryoura supervised the lineup, bringing the same attention to layering, texture, and overall composition that he applies to his pastry shop creations.

A campaign offering a combined total of 100 prizes is also running on Akagi Nyugyo Co., Ltd.'s official social media accounts to celebrate the launch.

Background

Consumer research conducted among buyers of the previous "Parfait Dessert" and "Grand Parfait à la Mode" products showed that parfaits hold a uniquely special place among desserts — something people associate with treating themselves. Eating these products at home was found to deliver emotional value in the form of a sense of occasion, luxury, and excitement.

Buyers skewed toward men and women in their 40s and 50s, tending to enjoy the products slowly and at their own pace. Many returned repeatedly for their favorite flavors and shared specific wishes for how each flavor could be improved. Drawing on these findings, the Special Parfait lineup was redesigned around the core value of "specialness" that the ice parfait series has always offered.

A Word from Chef Ryosuke Sugamata

Chef Ryosuke Sugamata

Chef Ryosuke Sugamata of Patisserie Ryoura, who supervised the Special Parfait series, shares his approach:

"When developing this parfait, I thought about the flavor the same way I think about the structure of a cake in my shop. To keep things interesting right to the last bite, I introduced variety in texture and taste through the addition of cookies and jelly, and kept everything easy to eat. I hope many people get to try it and enjoy it."

Profile

Born in Niigata Prefecture in 1976, Chef Sugamata entered the world of pastry after high school and traveled to France at 26. Over three years he trained across Normandy, the Rhône-Alpes, Alsace, and Paris. Upon returning to Japan, he served as sous-chef at Pierre Hermé Salon de Thé, where he absorbed not only Hermé's techniques but also his artistic sensibility, creativity, and depth of vision. In December 2007 he became head pastry chef at the opening of Deux Pâtisserie Café, and in spring 2010 opened a second location inside Tokyo Station. In October 2015, he opened his own shop, Ryoura (リョウラ), in Yoga, Tokyo, where he continues to create acclaimed French pastries alongside contributions to magazines, TV, and workshops.
