Captain's Bar & Lounge on the 3rd floor of Hilton Tokyo Odaiba (Minato City, Tokyo) begins serving its "Seasonal Parfait" series on Thursday, October 22, 2026. The series features ingredients at their seasonal best, and the first release pairs juicy Shine Muscat grapes with pear sherbet. A "Chocolate Parfait" that layers rich chocolate with the fresh flavors of cassis and orange also joins the menu the same day and will be available throughout the year.
With Tokyo Bay stretching out beyond the windows, the hotel suggests the parfaits as a relaxed dessert break to enjoy the season and the end of the day.
Seasonal Parfait (Shine Muscat)
The "Seasonal Parfait" series builds each glass around an ingredient at its peak. This first edition uses plenty of Shine Muscat, arranged like petals so the glass looks like a flower in bloom. Against the bright green fruit, translucent sugar work and gold leaf add a sparkle.
The juicy fruit is layered with smooth mascarpone mousse and a Shine Muscat-flavored cream, and the parfait is topped with pear sherbet. Crumble and white chocolate crunch add light, crisp textures, so each spoonful tastes a little different.
Chocolate Parfait (Chocolat Noir)
This chocolate parfait is meant for after a meal or after drinks, when you want to linger a little longer. Smooth chocolate mousse is layered with the sweet tartness of cassis and berries and the aroma and gentle bitterness of orange. Red wine jelly adds a rich depth, while nuts and crumble bring a fragrant crunch.
The top is finished with chocolate sherbet, cassis ice cream and brownie, along with a three-dimensional chocolate decoration and gold leaf. Eaten together, the layers move from deep chocolate richness to the freshness of fruit. It suits an evening conversation with someone special, looking out over the night view of Tokyo Bay.
