APÉRO Makes Its Niseko Debut: Experience Authentic French Wine Culture Paired with Hokkaido's Finest Ingredients

APÉRO Wine Shop Co., Ltd. (CEO: Guillaume Dupérier) is opening APÉRO NISEKO on January 9, 2026. The APÉRO brand, long cherished by wine lovers in Aoyama and Ikejiri, is making its debut in Niseko. Guests can enjoy casual French cuisine featuring primarily organic Hokkaido ingredients, paired with Hokkaido wines and sommelier-curated French wines.

Operating stores in Aoyama, Ikejiri Ohashi, and Kyojima in Tokyo, APÉRO is making its first regional expansion. Owner Guillaume Dupérier was captivated by Hokkaido's landscape, reminiscent of his native Savoie region in France, as well as its abundant ingredients and wines, inspiring him to establish APÉRO NISEKO.

The venue features over 200 wines curated by sommeliers, available by the glass or bottle, with personalized recommendations based on guest preferences. Bottles purchased at the bar can also be taken to enjoy at your hotel.

Hokkaido Tankaku Beef Seared Carpaccio with Caviar, Parmesan Cheese, Olives, and Fresh Herbs - 2,500 yen

The menu features carefully selected ingredients sourced directly by the chef, including organic Tankaku beef from Kitazato Farm and vegetables from LaLaLaFarm in Hokkaido.

The wine selection includes APÉRO's curated French wines alongside an extensive lineup of Hokkaido wines, including selections from Yoichi.

Chef Nadia Lekhal

With over 30 years of experience in French and Arabic cuisine, Chef Nadia has led multiple establishments in Lyon, France, developing expertise in culinary techniques, team management, recipe development, and creativity. She became the head chef of APÉRO NISEKO in December 2025.

Nadia's Philosophy:

"I aim to create cuisine that embraces Hokkaido's nature, returning to the earth. While respecting Hokkaido's ingredients, I blend my international experience and sensibilities to deliver dishes that tell the story of the seasons and the land."

Owner Guillaume Dupérier

Originally from Savoie, France, Guillaume studied in Japan during his university years and earned an MBA from Kyoto University. After returning to France to work in banking, he moved back to Japan and has been working in the food and wine industry for over 12 years. He currently operates three APÉRO locations in Tokyo and one in Niseko.

Guillaume's Philosophy:

"I am deeply drawn to Hokkaido, a place that evokes the feeling of returning to my homeland of Savoie. Through a dining experience centered on Hokkaido ingredients, I aim to offer a time to experience Japan's richness. Please enjoy heartfelt moments with the special wines curated by APÉRO."
