The centerpiece of the anniversary fair is the all-mentaiko pancake, a dish with a distinctly Fukuoka flavor. Fluffy, chewy pancakes are topped generously with rich mentaiko (spicy cod roe) cream and mentaiko butter.
Mentaiko potato salad and fluffy, creamy scrambled eggs are layered on top, making an indulgent plate that lets the umami of mentaiko shine. The moderate saltiness of the mentaiko and the gentle sweetness of the pancakes come together, with the honey mustard sauce adding a change in flavor.
