Toriden Betsuatsurae in Fukuoka Opens Summer-Only Kakigori Counter "Betsuatsurae no Ryo" Through August

Toriden Betsuatsurae, a private dining annex of the Hakata Mizutaki restaurant Toriden, is offering a seasonal sweet shop experience called Betsuatsurae no Ryo (別誂の涼。) from May 18 to August 31, 2026. Open at lunchtime only, the pop-up counter serves shaved ice desserts crafted with locally sourced Fukuoka ingredients alongside teas from Hoshino Seicha-en in Yame.

Matcha Kinzei – Premium Yame Matcha Shaved Ice with Warabimochi – ¥2,500 (tax included)

Amaou Strawberry with Fresh Strawberries – ¥2,500 (tax included)

The Amaou strawberry shaved ice is made using a generous amount of Itoshima-grown Amaou confiture blended with fruit flesh, then topped with freshly cut strawberries that bring out the natural sweetness and acidity of the berries. Condensed milk is provided on the side for those who want to add a creamy twist to the flavor.

Note: Amaou strawberries are available through the end of May. After that, different varieties such as yuzu and coffee are planned.

Matcha Kinzei – Premium Yame Matcha with Warabimochi – ¥2,500 (tax included)

This shaved ice features 100% first-harvest tea leaves from Hoshino Seicha-en in Yame, ground using a stone mill for a rich aroma and silky texture. Hokkaido-grown anko (sweet red bean paste) and warabimochi accompany the ice to bring out the full depth of the matcha flavor. The matcha is whisked fresh right before serving.

Three types of tea to choose from

Each order comes with a choice of hojicha, genmaicha, or Japanese black tea, all sourced from Hoshino Seicha-en.

About Hoshino Seicha-en:
Located in Hoshino Village, Yame City, Fukuoka, Hoshino Seicha-en is a tea specialty shop producing gyokuro, sencha, and matcha using traditional methods. Known as one of Japan's leading gyokuro-producing regions, the shop's teas have garnered recognition at domestic and international competitions.

A Six-Seat Counter in a Japanese Space

The 6-seat counter at Betsuatsurae no Ryo

The café seats just six guests at a counter crafted from ginkgo wood, known for its soft grain and warm golden hue. The interior features seasonal bonsai and floral arrangements by Shimazu Takuya, a bonsai and ikebana coordinator based in Itoshima, Fukuoka. The arrangements change with the seasons, offering a quietly shifting backdrop for each visit.

About Shimazu Takuya (born 1984, based in Itoshima City, Fukuoka):
Shimazu began working with bonsai and ikebana in 2003, and opened GALLERY SHIMAZU in Yakuin, Fukuoka in 2008. He established a bonsai garden in Itoshima in 2015, and handles a range of projects including shop decoration, bonsai leasing, floral arrangement, garden design, and collaborations with artists and craftspeople.

At the shop entrance, a "Hogi Musubi" (祝結び) ornament — a traditional symbol of good fortune for the home and meaningful connections — is displayed against a waterwheel panel dating back to the early Showa era.
