With this summer expected to bring nationwide temperatures above average and severe heat once again, Li Fang (1F), the Chinese restaurant at Biwako Otsu Prince Hotel (4-7-7 Niohama, Otsu, Shiga), is running a summer-limited "Chilled Chinese Cuisine Fair" through Monday, August 31, 2026.

The fair reworks Chinese cuisine for the season, aiming for cold dishes that stay full of flavor. Alongside familiar items like cold noodles and chilled tantanmen, the lineup includes sweet and sour pork finished with a fragrant black vinegar sauce, a soup fried rice topped with "shaved ice" made from frozen chicken broth, chilled shrimp in chili sauce, and cold spring rolls filled with ice cream and fruit — dishes that give classic Chinese cooking a cooling twist.

The frozen chicken broth is whipped into a light shaved ice and served over fried rice, so the flavor changes as it melts, while the sweet and sour pork pairs the richness of black vinegar with a bright acidity. Guests can also choose soy sauce or sesame dressing for the "five-ingredient cold noodles," or opt for the rich but clean-finishing chilled tantanmen. Overlooking Lake Biwa, the restaurant offers this lineup as a special, cool dining experience for the summer season.
