Courtyard by Marriott Sapporo Pairs Hokkaido Ingredients With Traditional French Cuisine for Its Autumn France Fair

From Tuesday, September 1 through Monday, November 30, 2026, Courtyard by Marriott Sapporo's second-floor all-day dining restaurant Substance is holding an autumn France Fair.

Built around "bistro cuisine," the roots of Executive Chef Tanaka's cooking, the fair's menu blends Hokkaido ingredients such as beef sirloin with the essence of traditional French cuisine. Guests can enjoy dishes that draw out each ingredient's natural flavor through the chefs' sensibility and skill, paired with wine, for a relaxed autumn moment with close friends or someone special.

Assorted Homemade Charcuterie

Assorted homemade charcuterie: jambon blanc, pâté en croûte, jambon persillé, and rillettes

An assortment of the executive chef's own charcuterie: pâté en croûte, a meat pâté wrapped in pastry; jambon blanc, a salt-cured then cooked ham often called "white ham"; jambon persillé, ham and parsley set in aspic; and rillettes, a pork paste made by slow-cooking the meat. All are made in-house to the executive chef's own recipes, each offering a different flavor and texture.

Tarte Flambée
