Dashi to Sushi Tachibana Tenjin to Open in Fukuoka's Tenjin on November 1, Bringing Dashi-Only Clam Shabu-Shabu to Kyushu for the First Time

Dashi to Sushi Tachibana Tenjin (出汁と鮨 橘 天神), a kappo-style izakaya (Japanese tavern), will hold its grand opening on Sunday, November 1, 2026 in Fukuoka's Hakata Tenjin area. It is the restaurant's first location in Kyushu. The kappo-style izakaya has won many fans in Tokyo's Ebisu and in Yokohama as an adult hideaway where reservations are hard to get. It is produced by the high-end sushi restaurant Akasaka Sushi Minowa (赤坂鮨箕輪) and is a sister restaurant of Meshiya Byakko Yokohama (めしや 白虎 横浜), a Tabelog Hyakumeiten (Top 100 Restaurants) selection.

Along with high-quality sushi shaped by the chefs one piece at a time, the menu features authentic Japanese dishes that draw out the umami of dashi, the foundation of Japanese cooking, as fully as possible. A lineup of 61 types of sake selected from across Japan can be enjoyed casually as well. The restaurant aims to be a "premium neighborhood Japanese eatery" where guests can relax, whether for an everyday meal, a special celebration, or an important business occasion.

First in Kyushu: Signature Clam Shabu-Shabu Enjoyed With Dashi Alone

The signature dish, "Dashi-Only Hamaguri (Clam) Shabu-Shabu," lets diners savor the depth of dashi, the essence of Japanese cuisine. It is enjoyed without relying on seasonings, using only the aroma of the dashi and the flavor of the sea. The large domestic hamaguri clams at the center of the dish are carefully selected, mainly from Chiba Prefecture, and delivered directly. They pair well with the golden "premium dashi," which brings out the umami of bonito, kelp, and shiitake mushrooms.

An Adults-Only Kappo Izakaya in Tenjin

The restaurant does not admit guests under 22. It offers a calm atmosphere as a kappo-style izakaya for adults, with subdued lighting and a wood-toned interior that create an adult hideaway for Tenjin's evenings. In a space of warm Japanese-modern design and indirect lighting, guests can choose from relaxed table seats and a counter that looks onto the chefs at work, with seating to suit a variety of occasions.

Authentic Sushi Following the Sourcing and Skill of Akasaka's Sushi Minowa

The restaurant carries on the 40 years of experience in selecting ingredients, along with the techniques, of the head chef of its affiliated Akasaka sushi restaurant, Sushi Minowa (鮨箕輪), and offers nigiri and hand-rolled sushi at izakaya prices. The aim is quality and freshness on the level of high-end sushi at everyday prices.

The menu also includes a wide range of creative dashi dishes, in the spirit of "begin with dashi, end with sushi" (出汁に始まり、鮨に終わる), which combines adult playfulness with skilled technique.

Enriching Hakata Tenjin's Food Culture With the Power of Dashi

A Hakata location is also planned to open soon after the Tenjin restaurant. Through successive openings, the restaurant hopes to contribute to the revitalization of the Hakata and Tenjin area and to the local community.

Rather than being just a restaurant that has expanded from Tokyo and Yokohama, the restaurant aims to be a community-rooted place that local Fukuoka residents will love for years to come. It plans to actively incorporate local ingredients and culture, and hopes to take root as a new "third place" where people in Hakata Tenjin gather.
