FAS and Park Hyatt Kyoto Serve Festive Afternoon Tea at The Living Room from December 1

A festive afternoon tea created in collaboration with FAS (ファス), a Kyoto-born fermentation aging-care¹ brand, is being served at The Living Room (ザ リビングルーム) on the first floor of Park Hyatt Kyoto (Higashiyama-ku, Kyoto), a luxury guesthouse in the heart of Kyoto's Higashiyama district. It is available for a limited time from Tuesday, December 1, 2026 to Friday, January 15, 2027.

Menu Inspired by FAS's Signature Ingredients

FAS is a fermentation aging-care¹ brand that takes "fermentation," a traditional Japanese technique, and elevates it with modern science to approach the skin in many ways. Its products are built around Black Rice Ferment Liquid² (黒米発酵液), which contains 738 ingredients.

For this collaboration, Park Hyatt Kyoto created original dishes inspired by the ingredients in popular FAS products. These include the Black Rice Ferment Liquid² used in every FAS product, a serum foundation containing Fig Ferment Oil³, and a cleansing gel containing Fermented Honey Extract⁴. Each plate expresses the rich character of its ingredient, making this a winter afternoon tea where guests can sense the thinking behind both brands' craftsmanship.

The afternoon tea is served one plate at a time in a course format, together with tea pairings centered on Japanese tea. Guests also receive a FAS kit made exclusively for this collaboration as a festive-season gift. It is a new way to experience the brand by "tasting" the ingredients that support FAS products.

The Living Room is decorated for the festive season, and the tea time brings together the blessings of fermentation that FAS values and the fine dining of Park Hyatt Kyoto.

A Word from FAS Brand Manager Minami Inoue (井上みなみ)

We are delighted to share the ingredients that support FAS products in a new way, by letting guests "taste" them, together with everyone at Park Hyatt Kyoto in Higashiyama, Kyoto. We hope guests will enjoy the distinct character of ingredients such as black rice, fig, and honey in dishes only a hotel can create, and feel FAS a little closer during a winter moment.

Menu Details

Festive Afternoon Tea menu

Starter

FAS Collaboration Item: Foie Gras Parfait with Fig Confiture and Pain d'Épices
Tea pairing: Iced Rooibos Blend

A moist pain d'épices kneaded with honey and spices is paired with a rich, smooth foie gras parfait and fig confiture. It is finished with fresh figs and hazelnuts, so the rich umami of the foie gras blends with the juiciness of the fruit and the texture of the nuts. With its showy appearance and layered flavor, it is designed as a starter that builds anticipation for the courses to follow.

From 5:00 PM, "Winter Mead" is served as the pairing item.

Three Savory Items

Tea pairing: Kuki Sencha

  • Snow Crab Arancini
  • Lily Bulb and Porcini Mushroom Quiche
  • Turnip Fondant with Caviar, Shungiku, and Yuzu Jelly

Ice Cream

FAS Collaboration Item: Monaka Spice Ice Cream
Tea pairing: Benifuuki, Kyoto

An original spice ice cream, made with several of the spices also used in Park Hyatt Kyoto's stollen, with a gentle sweetness from dried figs and honey, is served in a fragrant monaka wafer. The rich yet deep-flavored ice cream spreads an aromatic spice fragrance. The fresh acidity of strawberries and the light, toasty texture of the monaka add accents for a well-balanced taste.

Scone

Scone with Strawberry Confiture and Clotted Cream
Tea pairing: Benifuuki, Kyoto

Freshly baked scones are enjoyed with an original cream that combines strawberry confiture and clotted cream.

From 5:00 PM, "Omi Beef Croquette with Black Truffle, Egg Yolk Confit, and Red Wine Sauce" is served with a red wine pairing.

Sweets

Tea pairing: Kaze no Shizuku, Nara

  • Chocolate Macaron
  • Raspberry, Pear, and Vanilla Mousse
  • Mandarin Orange Tart
  • Chestnut and Cassis Sandwich
  • Caramel and Hazelnut Éclair

The five colorful sweets suggest the arrival of winter. In the raspberry mousse, a pear compote infused with rich vanilla is wrapped in a fragrant raspberry mousse, offering an elegant harmony of gentle sweetness and fruity acidity. Another is made by layering cassis mousse and chestnut mousse with Mont Blanc cream and sandwiching it between cookies. The lineup delicately expresses the flavors of winter.

The pairing is "Kaze no Shizuku," a Japanese-variety oolong tea with rich sweetness and an elegant aroma. It complements each sweet and sets the scene for a relaxing winter tea time.

Finale

FAS Collaboration Item: Honey, Kumquat, and Ginger Soufflé with Black Rice Rocher
Tea pairing: Black Soybean Tea, Kyoto

The course closes with an original soufflé made with rare multi-flower honey carefully raised by a beekeeper in Kyotango, black rice, carefully simmered kumquat, and fresh ginger juice. With its soft, smooth melt, the gentle sweetness of honey, the rich aroma of kumquat, and the refreshing aftertaste of ginger spread in layers. The black rice rocher, created as a tribute to the essence that symbolizes FAS, adds a toasty flavor and texture. The toasty, soothing black soybean tea brings out the delicate flavors of each ingredient, leaving guests wrapped in a gentle afterglow and a luxurious moment unique to winter.
