As part of Grand Hyatt Tokyo's initiatives toward achieving the SDGs, special menus themed around the mimosa flower, which is traditionally given on International Women's Day, will be offered with wishes for women's empowerment and gender equality.
At "Fiorentina Pastry Boutique," a mousse cake designed by a female pastry chef, featuring spring-like pastel colors inspired by mimosa flowers, will be available. With a refreshing yuzu aroma combined with pineapple and coconut, it offers a light and airy taste. At all-day dining "French Kitchen," a dinner course inspired by the "Mimosa Road" in the Côte d'Azur region of southern France, where mimosa flowers bloom vividly, will be served. The main course features roasted beef fillet with traditional French "Béarnaise sauce" characterized by its vibrant yellow color, accompanied by grilled yellow vegetables such as yellow carrots and Swedish turnips. Additionally, from amuse-bouche to dessert, all menu items are dyed in vivid mimosa yellow, including sweet potato soup and lemon tart with a refreshing aroma. The lunch buffet, featuring approximately 30 dishes, will also offer six special mimosa yellow menu items for a limited time. Enjoy a variety of carefully crafted dishes by the chef, including nage—a traditional French seafood soup combined with aromatic saffron that spreads the umami of seafood and vegetables—and smooth rare cheesecake.

The adorable silhouette highlights soft femininity. Yuzu mousse is combined with pineapple jelly and almond dacquoise, crafted to fill your mouth with a refreshing aroma. Passion fruit ganache montée is piped on top of the mousse to resemble a flower. Topped with sweet and sour crème citron, it offers a light yet deep flavor. This item is also recommended as a gift for "Mimosa Day (International Women's Day)," a day to express gratitude to women with respect.
