mesm Tokyo, Autograph Collection, a modern luxury hotel located in Minato Ward's Takeshiba area, will begin selling its "Five Senses Chocolate" collection starting Monday, February 9, 2026. Previously available exclusively as a welcome amenity for select guests, the hotel is now offering this unique chocolate experience to the public following numerous requests.

The chocolate collection features five distinct pieces, each designed to highlight a different sense: sight, taste, touch, smell, and sound. Each piece contains carefully crafted ganache that delivers refined flavors and pleasant aftertaste.

Development and Collaboration

The "Five Senses Chocolate" was developed under the comprehensive guidance and supervision of Daisuke Yamauchi, an accomplished chocolatier who spent 10 years at the world-renowned French chocolatier Patrick Roger, where he served as sous chef during his later years. Yamauchi currently owns and operates LoDYc chocolate.

The project began when Yamauchi stayed at the hotel and provided candid feedback at checkout: "The stay was wonderful, but it would be even better if the chocolate in the room were different." This comment inspired the hotel to pursue a chocolate that truly embodied the experiential values they wanted to deliver.

Through extensive recipe development and refinement under Yamauchi's instruction, the hotel team dedicated themselves to perfecting every aspect of the production process and finishing quality.

The Five Chocolates

Sight: This chocolate features luxurious gold leaf decoration. The ganache incorporates sweet red bean paste with a clean finish and subtle scotch whisky notes.

Taste: Highlighting passion fruit syrup from the Ogasawara Islands and refreshing lime acidity. The sharp citrus notes harmonize with smooth chocolate for an addictive flavor profile.

Touch: Features balanced acidity with chewy pâte de fruit texture. The changing mouthfeel with each bite creates a memorable finish.

Smell: The moment you bring it to your mouth, the rich aroma of Sarutahiko Coffee's "Takeshiba Blend" gently rises. As it melts, a latte-like smooth flavor spreads, delivering unity between aroma and taste.

Sound: Ganache filled with peta crispy rice, crushed almonds, and feuilletine. Light, crisp sounds of "pop" and "crunch" complement its refined texture.

The chocolates feature remarkably thin, delicate coatings that require handcrafted precision to achieve both thinness and lustrous, uniform finish—a process demanding considerable skill and time.
