Hoshinoya Karuizawa will launch a special "Karuizawa Strawberry Morning" breakfast experience from March 4 to May 31, 2026. This limited-time offering celebrates Karuizawa's morning culture with a luxurious breakfast centered around seasonal strawberries grown in the region's unique highland climate.
The Clear Air and Pure Water of the Highlands Nurture Rare White and Dark Red Strawberries

Hoshinoya Karuizawa, the birthplace of the Hoshinoya brand that provides extraordinary experiences at each of its locations, has created this special breakfast inspired by Karuizawa's morning culture. The breakfast showcases seasonal strawberries cultivated in the highland region's distinctive climate and pure water.
During this limited period, the property will open its normally evening-only "Mori no Hotori Cafe & Bar" (Forest Edge Cafe & Bar) exclusively for breakfast service. The menu features a comparison tasting of three strawberry varieties, including rare white and dark red strawberries, along with strawberry-focused dishes such as salads, smoothies, and sandwiches. Guests can enjoy an elegant morning experience engaging all five senses—from the sweet aroma and fresh flavor of strawberries to the sounds of birdsong and the sight of sunlight filtering through the trees.
Background
Karuizawa has long been cherished as a peaceful retreat from the bustle of urban life. Its cool climate and abundant nature make it an ideal place for physical and mental refreshment. The area has developed a unique "morning culture" where visitors leisurely enjoy breakfast at nearby cafes and restaurants in the crisp morning air, without time constraints.
Spring mornings are particularly special, as birdsong fills the air and the refreshing atmosphere feels especially pleasant. Hoshinoya Karuizawa has designed the "Karuizawa Strawberry Morning" to let guests experience this culture, featuring strawberries at their seasonal peak as the main attraction.
The strawberries are grown at Karuizawa Garden Farm, where the highland region's significant temperature variation between day and night allows the fruit to accumulate abundant sugars, creating an intensely sweet flavor. By offering the sweetest of these strawberries in three colors through various menu items, the experience allows guests to appreciate both the bounty nurtured by Karuizawa's rich nature and the leisurely flow of elegant morning time.
Feature 1: Karuizawa Strawberry Morning—Savoring Three Colors of Strawberries
The luxurious breakfast centers around strawberries at their seasonal peak. The menu includes a "Strawberry and Spring Vegetable Salad" appetizer and a fluffy omelet served with strawberry and tomato sauce, allowing guests to enjoy strawberries in various dishes. Additional offerings include a strawberry smoothie and strawberry fruit sandwich, providing a complete exploration of the strawberry's appeal.
Feature 2: Three Rare Strawberry Varieties Grown at Karuizawa Garden Farm

"Kaorino"
A red strawberry with no acidity, allowing you to fully enjoy its sweetness and aroma

"Shinju Hime" (Pearl Princess)
A white strawberry characterized by sweetness reminiscent of ripe white peaches or lychee

"Shinku no Misuzu" (Crimson Misuzu)
A dark red strawberry with rich, concentrated sweetness like banana or tropical fruits
The strawberries grown at Karuizawa Garden Farm accumulate abundant sugars thanks to the highland region's significant temperature variation between day and night. The breakfast features three varieties—red, rare white, and dark red (crimson) strawberries—all with concentrated sweetness. This special tasting experience allows guests to enjoy not only the visual beauty of the strawberries but also the differences in aroma, texture, and flavor.
Feature 3: Waterside Terrace Embodying Karuizawa's Morning Culture

Karuizawa has a well-established "morning culture" of leisurely enjoying morning time away from urban bustle. A special space has been prepared to embody this culture. The normally guest-only "Mori no Hotori Cafe & Bar," which typically operates in the evening, will be opened exclusively for breakfast during this limited period. Guests can enjoy an elegant morning at their own pace on the waterside terrace, where sunlight filters through the trees.
