Starting June 4, 2026, the all-day dining restaurant KAGARIBI at Hotel Indigo Karuizawa in Nagano Prefecture is rolling out a fresh collection of pastry items created by newly appointed Pastry Chef Koji Tachikake. Each piece in the lineup takes inspiration from flowers that bloom around the Karuizawa area, translating the region's natural scenery and seasonal colors into dessert form.
About Pastry Chef Koji Tachikake

Chef Tachikake graduated from Tsuji Confectionery College and honed his craft in Kobe before moving to France to train as a pâtissier. After returning to Japan, he worked at luxury hotels and joined FAUCHON HOTEL KYOTO as Pastry Chef in 2020. He later served as Executive Pastry Chef at The Shinmonzen before taking up his current role at Hotel Indigo Karuizawa in April 2026. His approach blends a traditional French foundation with a sense of playfulness and seasonality.

Tarte Citron "Daisy" — ¥920

Based on the classic French tarte citron, this dessert features lemon cream and confiture made from Shinshu-grown Meyer lemons. Meringue petals arranged to evoke flower blossoms bring a refreshing tartness balanced by a gentle sweetness.
Tarte Fraise "Vif Éclat" — ¥980

A special tart that layers house-made strawberry jam, white chocolate and strawberry mousse, and a rosemary and lime jelly around fresh strawberries. Classic flavors are accented by the aroma of herbs and fruit.
Mousse Chocolat "Dahlia Noir" — ¥940

A premium gâteau for adults, built with a light sponge, a rum-scented bavarois, and a crème chocolat that concentrates the depth of cacao. The interplay of contrasting textures and aromas adds dimension to every bite.
Millefeuille "Casablanca" — ¥920

Crisp, golden pastry layers are paired with mascarpone cream and finished with a generous amount of Madagascan vanilla beans. Rich and fragrant, the combination delivers a luxurious sweetness.
Shortcake "Anemone" — ¥960

A strawberry shortcake that pairs Madagascan vanilla cream with house-made strawberry jam to bring out the best in the fruit. Moist sponge carries the sweet-tart character of the strawberries alongside the rich fragrance of vanilla.
