Hokkaido Flavors Drawn Out by Wood-Fire Cooking
Matsu Grill & Bar is the main dining restaurant, where Hokkaido seafood, vegetables, and meat are cooked over the gentle heat of a wood fire until aromatic and full of smoky flavor. The dishes draw out the bold flavors of the ingredients themselves while combining in notes of citrus, oil, tomato, and herbs for plates shaped by the wood fire.
The name "Matsu" comes from the pine tree, which adapts to harsh natural environments and grows resiliently. It reflects the restaurant's aim of being a place where guests can feel Hokkaido's nature and culture.
A Space to Enjoy Sapporo's Views and the Live Energy of the Wood Fire
Large windows on the 17th floor look out over the streets of Sapporo. Watching the cityscape change with the time of day and the season, guests can enjoy dishes and drinks suited to each moment, from breakfast through lunch, dinner, and bar time.
In the open kitchen, the chefs judge the state of the wood fire and cook each ingredient with care. The flames, smoke, aroma of the wood, and even the sounds of cooking fill the space, giving guests a live, all-the-senses view of each dish coming together.

The adjoining bar serves original cocktails built around Hokkaido ingredients and ideas, including the Shakotan Mule, which combines Hokkaido-made gin with ginger, lime, and yogurt.
A Casual Cafe Dining Spot Also Opens on the Hotel's 1st Floor: Mr. Fish by Hyatt Centric Sapporo
On the hotel's 1st floor, Mr. Fish by Hyatt Centric Sapporo will serve fish and chips made with seasonal white fish landed off the coast of Hokkaido, coated in a light, crisp batter and paired with chips made from Hokkaido potatoes. The menu also includes items such as a fish burger, soft-serve ice cream, and churros, available for both takeout and eat-in. The aim is a casual cafe dining spot open to the local community and to visitors to Sapporo alike.
Hyatt Centric Sapporo Executive Chef: Hiromi Masukawa
Executive Chef Hiromi Masukawa began a culinary career as a chef at a hotel in Hokkaido, then spent three years in France gaining experience at Michelin-starred restaurants. After returning to Japan, Masukawa served as chef and executive chef at hotels around the country, engaging with Hokkaido's ingredients and food culture while pursuing cooking that draws out the natural qualities of each ingredient. Most recently, Masukawa has served as Deputy Executive Chef at Park Hyatt Niseko Hanazono since its opening.
