Following successful openings at Osaka Takashimaya in April 2025 and Kyoto Takashimaya in October, where the signature "Cheese Soufflé - Chef's Hat" sold out daily to great acclaim, Kashiwabiya is now opening its Nishi-Hanamikoji store in Gion.

Gion is the very foundation of Wabiya Korekido, where the main restaurant has stood for years. The shop brings the philosophy of "natural, carefully crafted, ingredient-focused" that has been cultivated in Kyoto to a space that harmonizes with Gion's streetscape.

In this quiet alley, visitors can enjoy confections displayed in showcases and special crepes served at the café counter in the back, experiencing a new Kyoto-style way of enjoying sweets.

Batter Takes Center Stage! Freshly Baked Crepes

Born from the philosophy of "utilizing ingredients" that the chicken restaurant Wabiya Korekido has cherished for 23 years, Kashiwabiya's crepes feature batter as the star. The batter is made with abundant red eggs and butter. Using plenty of red eggs creates a moist, deep flavor, while adding rice flour achieves a gentle, chewy texture.

Each piece of batter is carefully baked, layered with homemade sauce, and topped with milk ice cream. The contrast between the warm, freshly baked crepe and the cold, smooth ice cream melts together exquisitely in the mouth. The aroma, sweetness, and temperature variations all highlight the appeal of the ingredients in this crepe designed to be enjoyed with all five senses.
