The chocolate used is specialty chocolate from "Minimal," which aims for sustainable economic independence in the cacao industry through technical support and fair, ethical trade practices. Prior to the parfait launch, starting January 20, the resort will offer strawberry-themed afternoon tea, drinks, and cocktails. From the "Daikan" (Major Cold) period of the twenty-four solar terms to "Keichitsu" (Awakening of Insects), this season when winter cold deepens the sweetness of strawberries is celebrated with a diverse lineup.

Sustainable Chocolate and Strawberry Parfait

This is Six Senses Kyoto's first parfait offering, featuring chocolate and strawberries using "Minimal – Bean to Bar Chocolate –," a specialty chocolate shop originating in Japan.

The top layer features high-cacao crème chocolate made with "FRUITY-Madagascar" chocolate, which brings out the original appeal of cacao beans with a refreshing taste reminiscent of berries and dark fruit. The cacao and strawberry flavors blend smoothly, passing through fruit and tea layers, leading to crème chocolate made with "NUTTY-Sweet" chocolate, which has a fragrant nuttiness and elegant sweetness like vanilla.

The ice cream combines homemade amazake (sweet sake) with banana chocolate ice cream, while the strawberries are left untouched to showcase the natural deliciousness of this seasonal ingredient. By layering high-quality chocolate with multiple textures and flavors, guests can enjoy a depth of taste where sweetness, sourness, and bitterness expand three-dimensionally.
