Latin Bloom Halloween Brings Guest Chef Tacos and Live Latin Music to Grand Hyatt Fukuoka on October 31

Grand Hyatt Fukuoka (1-2-82 Sumiyoshi, Hakata-ku, Fukuoka City) is hosting a one-night, Latin-themed Halloween event called Latin Bloom Halloween – Tacos, Beer, Tequila, and Latin Live Music – on Saturday, October 31, 2026.

The event welcomes two guest chefs: Kensuke Kubota of Telas&mico, a popular multi-national restaurant with both a storefront and a food stall in Fukuoka, and Douglas da Matta, head chef of the Latin American restaurant COCINA.

After gaining experience at Nobu London and ZUMA London, Kubota opened Telas&mico in Fukuoka in 2010, followed by the food stall Yatai Telas&mico in 2017, both known for their original multi-national cuisine. For this one-night event, he is preparing tacos and house-made Kyushu pork sausage that are not on the regular menu — flavors born from his distinctive, free-spirited approach to cooking, available only on this day.

Da Matta, originally from Brazil, gained wide-ranging experience at restaurants in the United States and Fukuoka. He now runs COCINA together with his wife, Misa Fukushima, serving dishes centered on Brazilian and Mexican cuisine that blend techniques and food cultures from the countries where he has worked.

Guests can pair the two chefs' distinctive Latin dishes with beer, tequila, and cocktails for a special Halloween night.

Latin Bloom Halloween is built around the festive feel of flowers and Latin culture. The venue includes a photo spot decorated with marigolds, creating a glamorous space where guests can also enjoy dressing in gold.

Live music comes from full-band performances by Uzume Dagakudan (渦女打楽団) and the Shirai Brothers, playing four sets of Latin rock and Latin-style arrangements of Western songs. Guests can also try a lucky draw with every food order, with prizes including hotel stay vouchers — an interactive touch to enjoy alongside the food and music.

Latin Bloom Halloween brings together one-night-only dishes from two popular restaurants, Latin music, and a glamorous setting for a Halloween night with a different kind of atmosphere.

Guest Chef Profile

Telas&mico – Kensuke Kubota

Born in 1978 in Fukuoka City, Kubota moved to the UK in 2001 and trained at a hotel kitchen in Plymouth, then ran Cafe Rondong in Fukuoka from 2002. He returned to the UK in 2007, sharpening his skills as a chef at Life Restaurant in London and the internationally known high-end Japanese restaurants Nobu London and ZUMA London. He came back to Japan in 2010 and opened Telas&mico in Fukuoka, followed in 2017 by Yatai Telas&mico, the first officially licensed neo-yatai food stall in Fukuoka City. He continues to shape the local food scene with his original multi-national cuisine, and his work has been featured in VOGUE JAPAN, SPUR, BRUTUS, the UK's BBC, The Wall Street Journal, and other media.

COCINA – Douglas da Matta

Born in Brazil, da Matta entered the culinary world after learning to cook from his grandparents as a child. After studying the basics at culinary school, he gained experience at a range of restaurants in California, including Italian and Thai kitchens. He moved to Japan five years ago and spent about three years as head chef at a Mexican restaurant in Fukuoka, overseeing everything from prep work and traditional salsa-making to menu development. He now runs the Latin American restaurant COCINA with his wife, Misa Fukushima, and is also active beyond the restaurant with cooking classes, private events, and catering.
