MAISON ICHI, a Tokyo-based bakery known for its handmade approach to bread, will be set up in the Bakery Promotion space on the basement floor (B1F) of Nihombashi Mitsukoshi Main Store from Wednesday, March 4 to Tuesday, March 10, 2026.
The bakery has built a following for its focus on quality ingredients, fermentation, and texture design. At a recent members-only event, the bakery drew consistent queues throughout the day and sold out its key items early.
① The Signature Croissant au Beurre

The bakery's standout item, crafted with attention to the aroma of fermented butter, light layers, and a melt-in-the-mouth finish. A firm repeat-order favorite.
Croissant au Beurre ¥497 (tax included)
Made with 50% French-sourced butter folded into the dough, this croissant is fragrant and distinctly crisp. The butter used is Pamplie, from a village neighboring Échiré in France, made by traditional methods using high-quality milk. It holds European AOP certification — rich in aroma and smooth on the palate, though delicate in handling.

Spring-themed new breads are available at this pop-up, blending Japanese and Western elements for a delicate tea-time experience.

A buttery, crisp Danish pastry filled with chewy cherry blossom mochi (sakura mochi) and kanoko beans. Each bite delivers the gentle sweetness of sakura mochi, the texture of kanoko beans, and the rich aroma of butter — described as "spring wrapped in pastry."

From the Chef Boulanger

Chef Boulanger Profile: Takeru Hoshi
Takeru entered the world of bread-making at 18, learning the fundamentals at Couronne, a scratch bakery based mainly in Ibaraki. He then trained at Maison Kayser, gaining experience across retail shops, production facilities, and hotels. He joined MAISON ICHI in 2022, handling product development and operations, and was appointed Head of Production in April 2025, where he leads quality control and new product development. His specialty is hearty artisan bread.
