A special collaboration course is now being offered at Shinjuku Nadaman Binkann and Nihonbashi Nadaman from May 16 through the end of June 2026. The limited-time course, titled "Miraculous Banquet: Kohaku" (奇跡の饗宴 琥珀), was developed through a collaboration between Nadaman and Youki Foods Corporation, incorporating Youki Foods' Chinese, ethnic, and Western-style condiments into a traditional Japanese kaiseki framework.

A Special Course Where Japanese Cuisine Meets International Flavors
Executive Chef Enomoto of Shinjuku Nadaman Binkann worked with Youki Foods Corporation's range of condiments—drawing on their fragrance, umami, depth, acidity, and spice—integrating them into Japanese cooking techniques refined over generations. Each dish in the course takes on a distinct character as a result.
In the starter, bamboo shoots braised tosa-style are wrapped in fresh spring rolls and paired with a peanut XO sauce miso, adding toasty Chinese and ethnic notes to a Japanese-style preparation. The steamed course features a dobin mushi made with new onion and chicken stock, finished with lime for a gentle umami and a clean citrus lift.
The grilled course presents wagyu sirloin accompanied by an oyster miso dengaku, combining the deep richness of oyster sauce with the savory depth of miso. The meal includes cold soba noodles topped with cherry shrimp kakiage and a beef broth chawanmushi.






The course closes with Nadaman's original dessert, "Gula Malacca" (グラマラッカ), inspired by the Southeast Asian palm sugar of the same name. It combines the deep, caramel-like sweetness of the palm sugar with tapioca for a playful texture and Japanese ingredients, adding Southeast Asian aroma and complexity to round out the meal.
