This special course commemorates Head Chef Yuki Kanno's receipt of the Ministry of Health, Labour and Welfare Award (Distinguished Service in the Cook System) for his contributions to the development of Chinese cuisine in Japan and his dedication to training the next generation of chefs.
The course showcases Chef Kanno's refined techniques and culinary sensibility developed through years of experience. It features the restaurant's signature dishes such as "Squid Stir-fried with Green Shiso" and "Chen Mapo Tofu," alongside stir-fried Yonezawa beef with homemade "xiangla sauce," steamed longtooth grouper with green onion flavor, and steamed tiger puffer soup with depth and richness. Each dish highlights the natural flavors of premium ingredients combined with the distinctive aromas and cooking methods of authentic Sichuan cuisine.
